I just went and bought a desktop off Amazon last year, but yeah, it's worth getting a desktop and then just get a cheap laptop or tablet to use for on-the-go stuff instead. Although you could also get a laptop that accepts a firewire connection for an external desktop graphics card to work as well, that can be pretty pricey.

I do know how to swap out graphics cards, install new RAM, etc. Just the whole thing from scratch is something that I don't quite feel comfortable doing. I'm not super-handy, and don't have too much time on my hands.

I'm with you there. I don't do very well with hardware-- I did take apart a PC and put it back together for a college course, but then later on when I tried to just change the graphics card and power supply in a desktop I had a few years ago...I killed the HDD and lost everything, lol. Nothing wrong with buying a prebuilt machine...you're going to get something that looks better and is much cleaner/more organized internally, plus a warranty and support. I don't think I would have been able to put together something equivalent to the MSI Nightblade I bought last year- it's got an almost console-sized form factor and the cabling inside is immaculate.

Yes, easily. Your CPU is better than mine, but that's basically the same (nearly) loadout I'm playing the Witcher 3 on currently.
I'd suggest playing 1-2 before doing 3, since you can blow through those in an afternoon (well 2, really), but YMMV if you aren't ready for some jank in those.
You should use the HDMI on the laptop and play on your big screen tv while you are at home. There is a setting in the power options to not put the laptop into sleep mode when it's plugged in and the lid is closed.
