Have you seen Wesker's Report? He injected himself with the virus before he gets the claw. Plus, the claw doesn't actually disintegrate his...physical being.
I obviously have no idea why it would be Sherry (because I don't know what the story is), but I think it's her because it looks like her, she's been missing for three canonical games now (RE3, CV, and 4), and Takeuchi said that the girl that appeared in the trailer would be something cool for RE fans.
It could be Alexia, but that seems even more far fetched than Sherry, considering Alexia morphed into a mutant and then a giant bee.
