Everything looks like it has been made from the same material. You have dirt, brick, tile, plastic, metal and glass... and it all looks like it was made from the same materials, a semi glossy clay. This is evident in not just Halo 3, but other games as well.

His shirt and the arches could both be rock. It's just one is lighter and shaped like a shirt.

The rock in the background and the helmets might as well be color palette switches.
I could put more Halo 3 images as well, but most are pretty familiar with what that looks like. The most offending is one halo 3 water image where a player is stepping in it and it doesn't look like he's stepping in actual water but some soft metallic liquid. Everything seems to be from the same material, and I am really noticing this within this gen of gaming. Recolor grass and its ground, recolor metal and its grass. Dirt doesn't seem to be a different material from metal. It's just colored differently. In 5 years everything will look like glossy clay to us. They need to figure out, or hire someone who can figure out how to make the individual elements seem different.

To be fair, Halo 3 isn't really an envelope pushing game (must. . .not. . .say. . .mean things. . .about. . .Halo), Haze looks like the ultrageneric bastard child of Halo and FarCry, and I'mnot quite sure that is a very good screenshot of Uncharted. It looks great in motion.
My biggest problem with next gen visuals is that people always seem to go for realistic looks instead of creative ones.

Well I am not sure this an issue of how hard they are pushing the hardware, but more the choices they are making. As things get more detailed, it will be more obvious what you are doing and are NOT doing. They just are not doing anything in terms of thought to what materials are like besides shallow shape and color.
Though realism is why this hurts them. The new Doublefine game looks like clay, but thats the artistic style. These examples are of realism that has no realistic differences in material.

it depends on the game. Assassin's Creed has AWESOME looking skin, clothes, stone, etc. also helps that it has some of the best animation ever.
look at Mass Effect's faces, even the aliens are completely convincing.

Yeah, everything looks like it's plastic. Too many next gen games are like this.

Filters are the best way to go, to hide this mess.
look at assassin's creed or MGS4 or LP, sure some folk don't like filters but they really help in my own opinion.

what's wrong with that game? the lighting and animations look really good and it's amazing how much dialog there is.
