A couple of things:
I'm ordering a flip-top thingamajig and Swap Magic for SS: Tenka, so that is already on the list.
My knowledge of moon isn't very good, so keep that in mind.

Mobile Suit Gundam: One Year War (developed by the Ace Combat team)
Simple Series 2000: Earth Defense Force 2
Super Dimensional Fortress Macross (Sega-AM2 developed)
Sengoku Basara 2
Another Century's Episode 2
Another Century's Episode 3 The Final

Isn't ACE almost undecipherable to non-Japanese speakers?

You're probably thinking of the Super Robot Wars series. ACE is like a combination of Armored Core (developed by that team) and Zone of the Enders. You can easily play them without knowing Japanese.

Awesome.
Anything else (shoooters)?

Are those games as hard as Mars Matrix (my only major view into that genre)?
Any other fighting games or anything?
What about VF:FT?

www.play-asia.com is in the midst of their Chinese New Years sale right now, might want to see if there's anything that interests you.

If you want more fighters, here's what's still not in the States. The ones in bold are the best:
-Garou Mark Of The Wolves
-Fatal Fury Battle Archives 2 (contains all the AWESOME Real Bout games)
-KOF Orochi Collection ('95-'97)
-KOF NESTS Collection ('99-2001)
-KOF Neowave (The Japanese PS2 version has two more characters)
-Vampire Darkstalkers Collection (All the Darkstalkers games)
-The Rumblefish
-Arcana Heart (this has been picked up by Atlus, but the import is only $30 now)
-Hokuto No Ken (Arc System Works' Fist of The Northstar fighter. Think Guilty Gear)
-KOF Maximum Impact Regulation A (An improved MI2; lower-priced and awesome)
-Fu'un Super Combo (Savage Reign and Kizuna Encounter)
-Melty Blood Act Cadenza (doujin-fighter-turned-arcade game, full of chains n' air combo craziness)
KOF '98 Ultimate Match will be getting a PS2 port, too. The game is hitting arcades in March or April. Because of that, there's really not much of a reason to get Neowave or even the collections in my opinion.
Other stuff:
-SENGOKU BASARA 2: This is Capcom's take on Koei's Samurai Warriors games. It's more over-the-top, flashier, and more like an arcade beat-em-up crossed with a Musou game, with smaller, linear stages, but more enemy variety and bosses to take on. Just an awesome, awesome game all around, and what's even better is that if you like this, there's Sengoku Basara 2 Heroes, an expansion with more campaigns, playable characters, and levels. :bow Heroes also has 2P split screen play.
-Twinkle Star Sprites La Petite Princess: A 3D remake of the Neo-Geo vertical 2P split-screen competitive shooter. Also contains the original version.
-OZ: Interesting beat-em-up from Konami that revolves around juggling. I picked this up some time ago but really haven't spent much time with it yet...can anyone else here shed more light on it?
Virtua Fighter 4 Final Tuned never got a home release, by the way.

I totally forgot about OZ! I picked it up when I was in Japan in 2006, but I've probably spent only about an hour with it. Really neat art style from the Suikoden character designer and a clever attempt at connecting itself to Frank L. Baum's Oz universe. It did see a release in Europe under the title Sword of Etheria, if moon language really freaks you out.
Hokuto no Ken/Fist of the North Star is getting a budget release in Japan pretty soon.
-
OZ is quality title with 2 endings and the occasional alternative route.
-
Have any of you guys played XII Stag? I know that sold like 512 copies its first week but fuck it, looks good to me.
-
Be sure to pick up Garou: Mark of the Wolves. It's one of the finest 2D fighters ever crafted.

fixed.
-
OZ wasn't a bad game, but the level design was a bit dull and the framerate somewhat poor (30 fps with slowdown). Still, it had some fun juggling gameplay, great soundtrack (Michiru Yamane), and a fairly interesting storyline.

No ESPGaluda mention? That's pretty much my token PS2 import recommendation...
The other good games:
Mushihime-sama
Dodonpachi Daioujou
Twinkle Star Sprites: La Petite Princesse
SEGA AGES: Monster World Collection
SEGA AGES: Gunstar Heroes Treasure Box
RPGs which looked cool (but are of course difficult for a non-Japanese speaker to play):
Venus and Braves
Tales of Destiny Remix
Tales of Destiny 2
Tales of Rebirth
SEGA AGES: Phantasy Star Collection
