Im trying to make Ashe a gun-slingin mage, but she currently cannot equip ammo, since off-hand takes that spot instead of ammo.
Is there some Ammo license I need to get anywhere NEAR the GUN license branch of the board? If I cant do this im gonna be kinda pissed with the game.

What do you mean by off hand takes that spot? Do you have a gun on someone else and not have a second thing of ammo? And guns are definitely better than crossbows. I totally dig the ranged attacking caster thing, but katanas and staffs are too compelling right now, and I've only two primary healers.
There's no ammo license, you can equip it when you equip a gun.

Can someone better explain the weapons to me? I'm having a hard time understanding what sort of weapons to choose, if I need to balance out weapon choices, etc. Most places I've read have about a sentence on this subject saying something along the lines of, "this is how it calculates damage," but I haven't found that to be so useful.

Yes but the slot where ammo is supposed to be equipped is labeled as off-hand with ashe. I cannot equip a gun until ammo is present in this slot.

There's a really helpful list of what weapons do in you clan primer. Under tips there's an item called Arm Yourself! which lists all the weapon types and how they work. Guns ignore armor, rods do magic damage (better against with npcs with low magic defense), katana damage increases with magic and ninja swords with agility, etc etc.
And MAF: you can't equip ammo till you've equipped a gun. When you do the latter it'll prompt for the former.

The way I have it set up is I gave Vaan, my all-around type, Swords and Shields
Basch, my grunt powerhouse is getting stuck with heavy hitters like Axes and Hammers
Ashe, my mage, is going to be behind launching spells and arrows form her bow
If you put too much thought into the game you only get yourself confused, just stick with the basics and you'll have no problem

Ah, I meant Crossbows are Cooler then Guns, imo.

wave: boggle, the game has the gun in shadow and says I have to equip ammo when I try and equip the gun :p

If the gun is grayed out it's because you don't have the license for the gun or someone else already has it equipped. There are no ammo licenses.

buh I figured it out, clearly my fault, but I dunno whyyyy I couldnt figure it out lol.
