It's a company freakout. This is what happens when budgets get too big and a company is too scared to let a series just be. They start to take some stupid drastic measures to "change" a franchise to appeal to a broader, hipper audience. (ex. Sonic, Robocop, etc)

Because blood is kewl and matoor, and having a bloody fighter makes you look awesome among you awesome friends.

(and it's also that some people still cling to the franchise because of the 2d Mortal Kombats in hopes that it will be their saving gracing from a flagging franchise which really wasn't that good in the first place.)
