love metal, love shred, love jazz, love avant-garde weirdness. I grabbed "Bucketheadland 2" and I like it a lot so far. His discography is simply enormous and baffling though. What else is worth checking out?

Crime Slunk Scene, Electric Tears, The Elephant Man's Alarm Clock, Colma, Day of the Robot, and Population Override should give you a pretty good idea of his varying sound. It's really hard to pick one or two specific albums, because, as you said, his discography is massive, and his style tends to differ from album to album. But definitely try those at least. The Elephant Man's Alarm Clock is probably my favorite of the bunch.

Sweet, that should be plenty to be getting on with. Don't want to overdose and get sick of it.

Yeah no problem. Really, most of his stuff you can't go wrong with, although there are a few stinkers.

It's the 11 CD box sets n' stuff that worry me...
