Even though it's not a parody, I love Hardware Store.  The harmony is great and the song is beautiful, even though the subject matter is so incredibly mundane.  I think that highlights his ability as an artist - he's a great musician along with being a great comedian.

My all-time favorite Weird Al track is also not a parody - "Everything You Know Is Wrong" off of Bad Hair Day.
