I love fried eggs if done right. I cook in butter rather than straight oil, then cook them over medium. Once the whites aren't opaque, I flip, and let cook for a few more seconds. Mmm hard whites and runny yokes....

Milk seems to fluff up the eggs somewhat. Without milk the eggs can be a bit dense. You also get this slight milk taste to the eggs (that I love). Some people add other things besides milk (like creme fraiche :dool )

Use a non stick pan with a small coating of melted butter and you're fine. Also, the broken yolk of a sunny side up egg is the money shot in food photography. :drool

I just made up a batch of 3 scrambled eggs for myself. A good amount of milk (less than half the volume of eggs), a little salt and I'm in fucking heaven. Sometimes I'll eat them a little moist ( :teehee ) sometimes I'll let them dry out a bit. Sometimes I'll put it in a bowl and fuck the shit out of it, my balls slapping the pillowy surface, softening the blows.
