It has better environments but I'm not sure about the cars.

yeah, the environments look really nice. I remember watching an episode of Top Gear where they look for the best driving roads and wanted a game with courses that looked like those did. Forza 3 seems close enough.
I don't know if I'll buy it, though. Shift looks more interesting right now because it's compared to PGR. It depends on if I'm burned out on racing games. Or if they let me use my Logitech wheel to play the game.

I barely played Forza 2 because it was butt ugly and boring to boot, but I think the new lighting does make the cars look better.

Well tbf, the player in the gamersyde videos seems to suck, not engine-braking into the turns and whatnot.
I heard some people say that this game really needed a demolition derby mode or something because of the great damage modeling. Grid did that but the problem is that you have to model some pretty detailed frame damage in order for it to "play" like a real demolition derby. Also Grid used professional race cars and not stock cars so manufacturers would probably have a problem with people seeing how many times you need to T-bone a civic to split it in half or something. However awesome that may be.
It would be so awesome though if they had small puddles on the track that you had to avoid hydroplaning over. I hate it when sim games have different "weather" conditions that just change the amount of traction by XX percent.
