GOJIRA is indeed awesome, and stars Takashi Shimura, probably the best non-Mifune Kurosawa regular. :bow
GODZILLA: KING OF THE MONSTERS is also entertaining as hell, because it's literally Gojira with a random American douchebag cut into the film through movie magic to make it appeal to us more sophisticated lightskins. :usacry

Ran is probably the best that you haven't listed. I would definitely seek it out.
Check out Dersu Uzala too. I really love that one but it tends to get ignored since it is the one film of his not in Japanese. Although it was the only film he won an oscar for.
Oh and High & Low! My favorite Kurosawa period. Shocked Shake didn't mention that one, he loves that movie.
Pretty much everything of his I have seen is great. Only one I didn't get into was Dodesukaden. It's a about a distinguished mentally-challenged boy who thinks he is a train.
