Fuck that sounds so fucking delicious. Pork is a seriously under appreciated meat. I had some spanish pork shoulder two days ago (with rice and beans, the cut of meat and the way its cooked is called "Pernil"). All dat fat :drool

How often did you have to check on it?
I got a guy on a local forum pimping his smoker and I gotta admit, I could do like two or three pigs a year, freeze the meat and be eating like a king bbq-wise. I'm definitely looking into getting one even though I'm not a big rib guy.

Is your smoker electric?
How often did you have to check on it?
I got a guy on a local forum pimping his smoker and I gotta admit, I could do like two or three pigs a year, freeze the meat and be eating like a king bbq-wise. I'm definitely looking into getting one even though I'm not a big rib guy.
It's a small(ish) propane smoker that I got for a steal from a guy at work. $100 for the smoker and a propane tank.
I had to play around with it a lot yesterday until I got it to consistently stay at the right temperature. It kept fluctuating up and down for awhile, so I was keeping an eye on it every 20-30 minutes. Once I got it squared away though, I was only checking on it once an hour or so. Changed out the wood every two hours, and made sure there was always water in the pan. Very easy overall, but it did require me to keep my eye on the progress quite a bit.

Lordy, I don't know what happened today :(
I cooked it at 215 degrees like I was supposed to, but it took almost 17 hours. It should've taken 12-13 max.
My best guess is that I was opening the smoker door too much in an effort to 'mop' it (basting it with vinegar and seasonings to keep it from drying out) enough.
