In here we post dishes people need to try at least once in their life. It doesn't have to be hoity-toity French food either (even though I'm about to post some), there are some great Southern foods I have yet to try, convince me =o.
This is Daube (de Boeuf), aka Stewed Beef. It is delicious. Try this shit.

I've cooked Daube several times. Richard Olney does the best recipe, but as with everything Olney does, it's technical.
You cook it? That's awesome. Olney has the best recipe? Time to look that up.

Don't have the link (I was at work and just copypasted it and sent to my personal email), but here's the recipe:
Soup Nazi's Seafood Bisque
2 cups dry white wine
1 bay leaf
1 onion, roughly chopped
1 clove garlic
2 ribs celery
1 lobster, 1 1/2 to 2 pounds
12 medium-size shrimps, in shell
24 mussels, well scrubbed
12 sea scallops
4 cups heavy cream
1 cup milk
1 teaspoon dried thyme
1 tablespoon minced fresh parsley
1/4 teaspoon dried rosemary
1 cup fresh spinach, well rinsed and chopped
1/2 cup grated carrot
salt and freshly ground black pepper to taste
1/2 teaspoon fresh lemon juice
1. Combine the white wine, bay leaf, onion, garlic and celery in a large
stock pot over medium heat. Boil. Add the lobster, cover the pot
and steam for 10 minutes. Remove the lobster, set aside and cool.
2. Add the shrimps to the boiling broth, cover the pot and steam for
5 minutes. Remove the shrimps with tongs, set aside and cool.
3. Add the mussels, cover the pot and steam until they open,
about 5 minutes. Remove the mussels with the tongs,
extract the meat and discard the shells.
4. Add 2 cups of water to the liquid in the pot, bring to a boil and
add the scallops. Cover the pot, and steam for 3 minutes.
Remove the scallops with the tongs.
5. Extract the lobster meat, reserving the shells. Peel and devein the
shrimps, reserving the shells. Chop the meat into bite-size pieces,
cover and set aside.
6. Return the lobster and shrimp shells to the broth and add 2 more
cups of water. Bring to a boil, then reduce heat to simmer for
30 minutes. Strain the broth and return it to the pot. Discard shells.
7. Bring the broth to a simmer over low heat. Add the cream, milk and
herbs and simmer until mixture thickens slightly, about 5 minutes.
Add the seafood and simmer for 2 minutes. Stir in the spinach and
carrots and simmer another 2 minutes to just wilt the spinach.
Season with salt, pepper, and lemon juice. Serve hot.
Yield: 6 Servings

Taco Bell Crispitos
1/8 C. Cinnamon
1/2 C. Sugar
10 Flour Tortillas
Oil to fry with
Mix together cinnamon and sugar very well. In a dutch oven, or
large skillet heat the oil to 350 degrees. If you do not have a
thermometer, you can set it on medium high, but be carefull to watch
that it doesn't get too hot and begin to smoke. Quarter the tortillas
and deep fry 2-4 at a time. Allow them to cook on one side for about
30 seconds or unitl golden brown, turn over, and repeat. When
both sides are brown take out, and place on paper towels to drain.
While the tortillas are draining liberally sprinkle with cinnamon
and sugar mixture. These are really great with honey.
Taco Bell Enchirito
1 pound Ground beef
1/4 teaspoon Salt
1 teaspoon Chili powder
1/2 tablespoon Dried minced onion
1 can Refried beans 30 oz.
1/4 Diced onion
1 can La Victoria enchilada sauce
2 1/2 cups Shredded cheddar cheese
1 can Sliced black olives (2 oz.)
1 package Flour tortillas (10 or 12")
Slowly brown the ground beef in a skillet using a wooden spoon or spatula
to separate the beef into pea-sized pieces. Add the salt, chili powder, and
minced onion. With a mixer, or potato masher, beat the refried beans until
smooth. Heat beans in small saucepan or in microwave. Warm tortillas all at
once in a covered container, or wrapped in moist towel in microwave. Set on
high for 40 sec. or warm individually in skillet for 2-3 min. per side.
Spoon 3 tbs. of beef into the center of each tortilla. Sprinkle on 1/2
tsp. diced fresh onion. Add 1/3 cup refried beans. Fold sides of each
tortilla over the beans. Place the tortilla onto a plate. Spoon
3 tbs. enchilada sauce over top of the tortilla. Sprinkle on 1/4 cup
shredded cheese, and top with 3 olive slices.
Taco Bell Green Sauce
1 lb. fresh tomatillos
3 large jalapeno peppers, seeded
1 medium onion, chopped
2 cloves garlic
6 sprigs of cilantro, stems removed
2 cups chicken broth
1 T. vegetable oil
Husk tomatillos and cut in half. Stem and half peppers. Boil tomatillos
and peppers in chicken broth for 10 minutes. Strain, reserving broth.
Combine tomatillos, peppers and remaining ingredients, except for the
oil, in a blender and mix until almost smooth. Heat oil in frying pan
until very hot. Add the tomatillo mixture and cook for 4-5 minutes,
stirring constantly until dark and thick. Add reserved broth to mixture
and bring to a boil. Reduce heat and cook until thickened,
about 10 minutes, stirring occasionally.
Taco Bell Hot Sauce
6 oz Can Tomato Paste
3 cup Water
2 tsp. Cayenne pepper
1 1/2 Tbls. Chili powder
2 1/2 tsp. Salt
2 tsp. Cornstarch
2 tsp. Distilled white vinegar
1 Tbls. Minced dried onion
2 Tbls. Canned jalapeno slices
1. Combine the tomato paste with the water in a saucepan over medium heat.
Stir until smooth.
2. Add the cayenne pepper, chili powder, salt, cornstarch, vinegar,
and dried onion and stir.
3. Chop the jalapeno slices very fine. You can use a food processor,
but don't puree.
4. Heat the mixture to boiling. Continue to stir about 3 minutes
and remove from the heat.
5. Let the sauce stand until cool, and then put
in a tightly sealed container and refrigerate.
This will last for 1 to 2 months. Makes 3 1/2 Cups.

good mongolian beef should not taste like steak or have a stringy/fatty texture, you almost shouldn't be tasting beef at all, the beef should be more like a conduit for the sauce

Not a fan of beef stew/roast, well my mom's beef stew/roast. It just doesn't taste like anything to me.
BUT whenever we go camping we add pancake mix to it to create this awesome camper's stew that rocks

Korean blood sausage. With what looks like a bit of tripe. I'm not a tripe fan, but I generally like blood sausage. This one was okay. Best blood sausage I had was in a gumbo at a place in Sacramento. They no longer serve that version anymore though.

These are the sauteed greens at The Red Room in Santa Cruz. This is my favorite appertizer of ALL TIME. I have yet to fully figure out how they make this, but my best attempt so far is truffle oil and olive oil, lemon juice, white wine, roasted galric and a combo of chards and leafy greens.
They also have great drinks there.

The below section is dedicated to PORK BELLY. It still amazes me that so many people don't know anything about pork belly outside of bacon. Don't get me wrong. Bacon is delicious. But good god are you missing out! Sometimes I'll even mention "pork belly" and people are like "EW", then I'm like "bacon is made from pork belly" and they're like "WHA...?"

My experience with Ethiopian was not as good. I enjoyed their potato and lentil dishes, but I was burping up and tasting the food for like two weeks after. Just the thought of some of the dishes makes me gag a little.

There's a whole bunch of ethnic slightly sketchy looking places near my house -- I gotta try some of em but my wife is like deathly afraid of food poisoning so if they didn't get a good health score (or they haven't been scored because it's just a sketchy taco truck) I have to go alone :'(
University Way, lovingly referred to as The Ave, has a string of sketchy local ethnic places. They are all quality places. Good tempura, pho, schwarma, dosas, bulgogi, etc. We often walk over there on Friday nights for dinner.

Idk much about Seattle, but I do know there is (or was) and middle eastern place I like on first and cherry. It used to be a hookah bar too so I'd go there when visiting friends going to school up there.
There's a big hookah place on Roosevelt near the Trader Joes and Half Price Books. I've never been by it when it's open, but it's one gigantic room with tons of couches.

Yeah I wasn't a huge fan of the Korean blood sausage. It had a lot more rice than I imagined it would have. :-\ I like blood but it seems a lot of recipes with blood uses rice or some other filler to add volume.

You know how mushrooms have a very distinct flavor? Lamb is kind of like that. You know it when you eat it.
so it has a distinct taste like beef chicken and pork?
In defiance of all probability, it tastes nearly entirely unlike chicken.

Anybody have experience with Filipino food (outside of lumpia)? New place opened up nearby so we tried a bit. Surprisingly there hasn't been a whole lot of Filipino places around here till somewhat recently.
There is definitely something SO RIGHT about a whole fish cooked inside banana leaves. :9

Quiche is delicious. Not quite sure how it got its reputation as a "foo foo" dish but it's good stuff and should be recognized as such.
