My parents are part of the "well done" persuasion. I asked my mom about it a couple of years ago and she told me it was a habit they had picked up from all the e-coli scares back in the 90's.

Above medium rare is acceptable only when not dining in a high quality restaurant because
1) meat quality is not that good
2) chef is not that good and the steak might come out bloody pink if you order medium rare

At Le Severo in Paris which may be the best steak in the world, they toss your ass out if you insist it be cooked any other way than the chef recommends.

I remember taking a girl to ruth's chris steakhouse before prom and she wanted to order a bone in ribeye (best cut ever) well done. The manager actually convinced her to order a sirloin instead. I was not mad because if saved me like 35 bucks.

seven steak is my cheap go to steak. 2.29/lb at my local butcher and fatty and delicious. Cooks in like 2 minutes on the grill as well.

I order medium because I don't really give a fuck anywhere in the med rare to med well range. If it's steak, I'll fucking chow with no complaints.

I go pretty well cooked for burgers, mostly because I don't trust whoever's cooking it and their kitchen. Steaks give me rare - med rare. Never had blue rare before

I confess that I have traditionally been a "medium" steak eater, but am slowly coming around to medium rare.
Anyway, here is the best steakhouse in Toronto (and as such, the best I've been to, although I have been to a couple high-end places in Montreal). I've been to every high-end steakhouse in the city, and this place is le shit.

They dry-age the steaks on site, and the menu changes daily. They don't just offer you the choice of cuts, no, they even offer you to choose between the different farms their steaks came from.

Depends if the chef knows how to make it. Here we are very familiar with it, I often go buy Ostrich biltong at the farm.
