Yeah, I recently realized that the show's framework pretty explicitly positions "gayness" as a mode of being that in some sense sits along the same axis or relevant configuration space as being an octahedron or a cloud of nanites, etc.

Not really.
It was a product of its time, and doesn't really hold up. The animation style is awesome, the angst is palpable, and there is plenty of doujinshi pr0n out there to deal with the urges that the entirety of the female cast was designed to stimulate. The final two episodes of the series are laughably bad, until one realizes that the previous 12 hours of viewing have led to this sad climax.
There are a bunch of movies where Anno re-does the ending, adding fake complexity to an already shaky foundation. I'm talking out my ass here, because I've never watched any of them, as I try not to fall victim to the sunk cost fallacy.
yeah there weren't really "a bunch of movies" - EoE was the only real movie (pre-Rebuild), the other one was more like a weird remix of bits of the TV series that served as a teaser/marketing gimmick for EoE. and looking at it in terms of whether it "fixes" the TV series ending kind of feels beside the point to me - to me it's an extraordinary film in its own right - but I maybe have a kind of skewed perspective on this having seen EoE (and watched it over and over) before ever watching any of the TV series (I've still only seen a few episodes)

Death and Rebirth is just a series recap plus some scenes from EoE. The live-action movie is completely dead, so just forget about that. Heeeeh some of EoE tangents in the last act might be right up this alley. It's also a pretty brutal, dark movie (much more so than the series, if only because the graphical depiction is up a notch), so it's a good bucket if you're feeling edmo/edgy. Still, probably of little interest if you never at any point felt invested in the show.
Actually the best film if you have a passing familiarity with the show is probably the latest Rebuild "3.00 Q You can (not) redo". It's visually very appealling (Co directed by Tsurumaki, who did FLCL and Diebuster), over the top with some production value (a bombastic score), the plot is bonkers and go in fresh & weird directions so you're bound to be surprised. It's much less bloated than EoE (and fairly action packed) while remashing some of its visual flair and it's not necessary to see the first two "Rebuild" films if you have some familiarity with the TV show : don't worry, nobody understood the finer details yet, no matter how much of an Eva geek they are.
