I'm not even sure what to do in London. I've never been interested in the city, but everyone says it's a must see and I just played AC Syndicate so I kinda know some of the famous buildings and would be cool to see them irl.

Go to Spain. We went to Barcelona, Madrid, Toledo, Granada and Malaga a couple years ago. It's cheap, the food is amazing, the people are super friendly and did I mention how cheap it is?
I also love The Netherlands (Amsterdam is cool, particularly de Pijp, I really dig Haarlem and then spending time with family friends in Friesland) and Belgium.

I mean... I never had any problem in Paris (apart from loud drunk assholes making noises from time to time) and that include last subways, night buses and walks from 1 to 5am but of course it only takes once and all that. Depends on the districts but Paris by night is fairly active and crowded.
Uber might not be too expensive if you do short trips.
