I'm a good cook but i'm not good at making indian food yet because i refuse to do it without a house with proper vent and i live in an apartment :mjcry
I just don't want me and my girls clothes to smell like curry :donot
Another issue with apartment food and Indian cooking is storage. Actual good Indian food requires storing whole spices to toast and grind and I don't have that kind of space in my kitchen rn.

Vietnamese is the one cuisine I really can't get into, I've tried multiple times but it all tastes so bland. I'd take a bowl of Chinese beef noodle soup or shoyu ramen over pho any day of the week.

Indian is definitely my fave, vindaloo in particular. I love Thai and BBQ as well. Lately I've been enjoying Georgian and Uzbek, there are a few good places in NY for it.

Greek cuisine is criminally underrated, it has so much more to offer than gyros and souvlaki.
It's not a very original answer but for me it's gotta be food from the Mexican Empire. I just had some al pastor tacos and I'm feeling one with the world. Gonna be one with the toilet soon, too.
