Got a bunch of carrots, onion, and potato diced up and sealed over the last week. Some to freeze and some to eat fresh. I can make all kinds of things with those ingredients. Also packaged up 18 pounds of chicken breast and got a 25 pound bag of rice divided and sealed too and lots of pasts and canned goods. So I'll be making curry & rice and chicken multiple ways while I stay at home.

I also got snacks. Them GoGo Sqeezes, Nuts, Jerky, and shit loads of Perrier Water cases. Also got a crap load of oats and different cuts too so I can make savory oatmeal or sweet oatmeals.

Menu:

Curry Rice with Pork/Chicken
Chicken Bacon carbonara with asiago cream sauce over pasta
Chicken chili
Pork Ramen
etc...

Making burgers today. Got some salmon and pork in the freezer. Some cheese and turkey slices, eggs, cream cheese, sausage, milk, Powerade in the fridge. Bananas, cooking onions, garlic, a few cans of soup, 3 various cereals, tea. Oh I also have that delicious Hershey cake in the freezer. The one that you can buy by the slice at Burger King. It's the best.

Edit: and I bought "Freedom of Press" beer by Revolution brewing. It's a session sour so I thought I would like it a lot, but I think it's pretty average. To my taste buds. It has a currant flavor. Yeah, I don't know. Won't ever buy a pack of it again. Many other sours and session beers I enjoy.

Saw that flour was sold out everywhere.
Bought some wheat grains and will make my own flour and trade it on the black market for cigarettes.

Seriously though, my wife loves to bake and we only had one pack of flour at home, but that’s plenty for some delicious cupcakes :lawd

I'm going to make a massive pot of chili and probably some chunky vegetable soup. Will use any leftover chicken to make chicken soup as well. If I can find some white beans, I'll make some fasolada.

Last week I made and froze two batches of chili and one big ass pot of veggie soup. I have 30 cans of various Progresso soups (gonna get my daily sodium, for sure). For breakfast I bought two large canisters of steel cut oats and a bunch of frozen morningstar farms veggie sausages. I have enough coffee to last for half a year, with an emergency package of powdered non-dairy creamer (yuck) and plenty of stevia. For the next week or maybe two I'll keep going to the store and getting fresh produce. After that I'll start eating from my supplies and having eggs delivered I guess. I really enjoy omelettes. Plenty of butter and cheese in the fridge.

I'm at high risk (fat, pre-diabetic/type2, chronic respiratory issues) so if I get this I'm way more likely to die than just 2%. To say nothing of the fact that in America, even if I pulled through I would end up broke since I have no savings and our health care system is utter shit. I can't afford to get it, and I can't afford to get saved if I do. So I'm taking this more seriously than most.

Living in the shadow of Mt. Rainier, my wife has always made sure we're prepared to be without access to stuff for a long time. We have a freezer in our garage full of berries and meat, as well as a pantry with tons of heirloom beans, rice, a bunch of canned stuff she made herself, etc.

85% of my calories are rice, pasta, beef/chicken, canned beans, and canned tuna. Other than the beef and chicken, I think I already had a taste for quarantine cuisine.

I do eat fast food a few times a week so those might get closed down, I should probably stock up meat, potatoes, and hot sauce packets.

Looking at the McDonalds app... buy a filet-o-fish and get any size fries and apple pie for free. Guess I'll do just that. Shouldn't be too busy if I go there at like 3:30.

edit: It was dead and somehow my order still got lost in the shuffle lol. they gave me an extra pie and then the lady gave me some strawberry shake that someone forgot or was just extra sitting at the counter when I asked what the situation was with my order. strawberry shake was ok. not even close to Shake Shack quality. free is free though

My strategy is to get food that's insanely easy to make without too much effort, like, crawl to a heat source and plop the shit in.

Got lots of flavored tuna packets (ton of Jalapeno and Thai sweet chili), tons of Uncle Ben's ready rice (four cheese, rice and beans, Spanish rice). Three boxes of instant oatmeal, will probably buy 5 more (maple and brown sugar, strawberries and cream). Some canned mini ravioli, Ramen, and a couple cans of baked beans.

Feeling a bit cannibalistic...just made some leek and potato soup.

Just waiting for it to cool so I can add some cream.

Ingredients
1 leek
4 medium potatoes
1 garlic clove
1 celery stalk
1 can of cannellini beans
olive oil
vegetable stock
salt
cream

Method
Fry the garlic, celery and leek in some oil until the leek is tender, add the potatoes and cook them a little too. Cover with vegetable stock and bring to the boil. Add the cannellini beans once everything is cooked and let them cook a little too. Add salt to taste.

Let everything cool down for a bit, then get a hand blender and puree everything up fine. Add cream if you want a creamier texture.




EDIT: Turned out fucking amazing.

went to the store yesterday and it was pretty funny what was left. if you are eating vegan or gluten free, you had the run of the store.

the meat section was hilarious. all that was left was a lot of corned beef, chorizo, and bratwurst. :lol i left with some of each and am looking forward to it :delicious

Last night I tried to take 2 chocolate frozen waffles and make a peanut butter sandwhich between them.  (couldn't find bread).

It did not go well.


Today I was able to find bread and a bunch of stuff so cooking will be more productive going forward.

Cooking some spaghetti sauce today.

Started with onion and garlic in olive oil

So I've decided that to learn how to cook and stop eating frozen food and more interesting cuisine (today's lunch was Italian sweet chicken sausage pan-fried in naan bread with some roasted salted green beans and ritz crackers), since the market availability of ingredients is sketchy and potentially dangerous to acquire, I'm gonna try one of those meal kit services next week and see how it goes. I like the idea of it, since I have a lot of GI limitations (can't handle a lot of spices, dairy, etc..) so I can leave out stuff I don't eat.

Did a bunch of review reading and menu looking and ended up going with Gobble.com for a test run. Should get some breakfast/dinners next Wed and will try it out for a week. Only things you seem to need besides pots and pans and knives are salt and pepper and I definitely have salt...but need to see if I have pepper.

Some of the other services you need salt, pepper, sugar, butter, olive oil, vegetable oil. I do not have all of those and not sure if I can get them in today's market :| I have olive oil + salt and that's probably it. Gonna try to track down the rest to give more options next time at the market.

According to Finnish google results it apparently means these processed plastic wrapped single slices of soft cheese-like substance? I think that's what fast food hamburger places use. I've never heard that term before, they're just called cheddar slices here (the ones used in non-fancy burgers).

My girlfriend and I tried Sun Basket for a little while. The meals were organic, had nice variety, mostly tasted pretty good, some even delicious, with the occasional 'blah' one in there. It's pricey and although the meals said they were for 2, I at least came out pretty hungry (but I have a big appetite). I'd definitely recommend if you have a few $$ to spend.

american cheese is just colby and cheddar mixed together

The more popular version of American Cheese is the cheese product (ie. what comes in wrapped single slices). It's a mixture of milk, whey protein concentrate, milk fat, salt and some cheese. Our government doesn't even allow it to be called cheese.

Those are the ones you'd typically find on a burger or in a cheese sandwhich. It melts better and retains it's consistency better.

Yeah, they look a lot like Kraft's Sottilette, but more orange in color.
Though the taste of Sottilette is absolutely abysmal, and not really like Cheddar, so i'm not sure if that's the same thing.

the processed & packaged version is the same thing but the non-kraft version of american cheese is actually pretty good. the kraft version is basically just salt with a melty sort of texture but sometimes that's what you want. :lol

I made some good bacon yesterday. The first time I tried cooking bacon I overcooked it and it got crispy and was ok but ehhh I like my bacon meaty.
Last night I cooked it less and added a pinch of sugar on top and it was really good.

Still haven't been able to buy real eggs, or even yellow egg liquids so all I could make with it was liquid egg whites with some salt & pepper and toast, but was good enough.


Tonight I'm gonna try making Tilapia and rice. Was able to get some frozen tilapia and put it in the fridge to thaw this morning. Should be getting a lemon & a lime in a package today. So should be able to cook it up with salt/pepper/lemon and hopefully will taste solid. Haven't cooked fish in like 5-6 years so if it's like the bacon might fuck up the first time but get the hang of it by the second time.

Getting my first Gobble box tomorrow and will have more real ingredients to cook with thankfully.

Wanted to make chocolate chip cookies but only had whole wheat flour. Surprising the first few batches were pretty good, then I got lazy and put the rest of the batter in like a lil cake and it turned out so good

I forgot to mention, I also did not have vanilla extract so I used a bit of mrs buttersworth and a splash of jameson Irish whiskey lol

had flat bread and home made sweet chilli hummus for lunch. Was pretty nice.

Doing meatballs and pasta for dinner wiith some spicy cheese, managed to get a full shop in on Monday so finally got fresh veggies, bread and meat!

Made some pasta with a gorgonzola spinach sauce. It tasted good, but I added too much milk thinking otherwise the gorgonzola would overwhelm everything and it became too runny.  :maf

Just finished my third batch of rye bread. I think I'm gonna make a batch once a week, unless I get sick and can't be arsed while I'm dying. Or if I can't find rye flour anymore, the whole shelf in the supermarket has been practically empty for a while now. Apparently I'm not the only one who decided to start making their own rye bread. It's officially impossible for Finnish people to exist without it.

I don't buy rye bread too often and I don't really see myself buying it at all anymore, mine's better than many store-bought ones :pimp Now the only issue is storage, paper bags and they dry out, plastic bags and they get too soft. I guess a bread box could work?

Living in the shadow of Mt. Rainier, my wife has always made sure we're prepared to be without access to stuff for a long time. We have a freezer in our garage full of berries and meat, as well as a pantry with tons of heirloom beans, rice, a bunch of canned stuff she made herself, etc.

Got my meal kit service ingredients today and started cooking! I am very bad at cooking!  :doge

The mushroom miso soup from daily harvest was ok. A little too salty and mushroom-y.

Now I cooked my first Gobble meal of Pasta and Meatballs. This turned out well but there was one part where it said COOK MEATBALLS TURNING UNTIL BROWN ON ALL SIDES ON MEDIUM IN PAN WITH 2 TABLESPOONS OF OIL AND THEN ADD POMODERO SAUCE AND SPINACH AND THEN TURN DOWN TO MEDIUM-LOW WHEN IT SIMMERS.

Which me, not knowing how to cook, would assume to mean that you would follow that to the letter and add the sauce in the medium cooking oil pan and turn down when it simmers.

But I start pour the sauce in and holy fuck volcano oil spray and I jump back and the bag of pomodero sauce goes flying all over my kitchen and my clothes  :doge
Food tasted good, meatballs were tasty but a little tougher than I like, not sure if that means I cooked them too much or too little.

But between the cooking, eating and lots of cleaning I am so fucking exhausted and ready to pass out to bed after this. I don't know how people cook and clean daily with how tiring it is. And I cooked right after I worked out for an hour and was full of energy!

Also Gobble portions are AMERICA SIZED portions, so even though I only cooked portions for 1 serving I could only eat like 1/2 and saved the other half in a container. Will make meatball sandwiches for lunch tomorrow. Also probably need to order 1/2 as much food next time.

1 and a half weeks of iso now aside frm grocery shopping. I've eaten a lot of lasagna and pasta in general already. made prob around 3 kilos of ragu and froze it in portions for random meals. 1kg fatty pork mince, 1kg beef mince, processed half a celery and 6 carrots, 2 onions, garlic and chucked that in with all the usual herbs you'd expect. blended 3 leeks into the white sauce for the lasagna too. would normally make my ragu for lasagna without so many vegetables, keep it fatty and tasty with a really rich white sauce but figured I'd make something a little healthier this time 'round (adapted a random recipe jamie oliver wrote).

will make sure to get pics of anything interesting in future. just figured I'd tout the bulk ragu for pasta / lasagna / toast. whatever! because I've found it a really nice satisfying versatile thing to have when I cbf making anything, and it freezes really well. lasagna is still one of my all time favs when high af too. got about half an O left in my stash til I need to venture out, a thc oil vape and 4 bottles of wine left. got another 4 weeks til they review the quarantine here. wouldn't be surprised if they keep it going, but they're going to be getting a lot of pushback too. weird times. im going to come out of this p jaded. been doing a bottle of wine and a joint nearly every night. prob not recommended, just idk, I kinda just got into the swing of doing that and the haze keeps me nice and docile like a dopey house cat.

Making Ragout Bolognese that should last 2-3 days.

First step is to fry off some bacon/pancetta in olive oil.

Then add one or two stalks of celery, carrot and onion finely chopped and make them sweat, not fry

The add 800 grams of minced pork and beef. Brown until there is only clear fat/oil left when you put it to the side.

Went to a small organic market near my house, in the more upscale part of town (over by where one of the richest people in the world live)... was loaded with groceries (I even got paper towels and TP), barely anyone there, super clean, there was a plexiglass guard separating me from the cashier... in and out super smoothly. Now I have a bunch of fresh produce to cook with. Gonna try my hand at sausage and peppers in a few days.

Tried my next cooking attempt. Sun dried tomatoes/panko crust chicken breast with asparagus and polenta with garnashing of sun-dried tomatoes/garlic/olive oil + basil.

Took me about an hour and boooooy did I go through a lot of pots/pans/utensils and spent 30 mins cleaning after.

Been real happy with the quality of the ingredients (meats, veggies, sauces, breads) from Gobble.com and the recipes. Definitely going to keep subbing with them until lockdown is over for my main meals.

I made some waffles for breakfast from them and holy shit they were the top3 best waffles I've ever had. Normally when I make frozen waffles in the over they come out crispy, but these came out fluffy and sugar crusted and spiced and just smelt amazing and tasted so good. Tomorrow thinking I'll make the chocolate chip cookies I got from them.

Otoh, haven't been impressed by Daily Harvest's smoothies or soups. Getting one more set of smoothies to try (there's a coffee bean one that's supposed to be a mocha fap equivalent) and then I'm bailing on that.

Made some Frikadellen (similar to meatballs/burger) and ate them over the last two days.

Minced pork/beef with some onions, garlic, parsley and seasoning.

Breakfast was selfmade breadrolls with cheese.

The main course today was bolognese.
Minced pork/beef, 2x sieved tomatoes, 1x full tomatoes, carrots, celery, onions, garlic, basil, salt, pepper, paprika powder sweet and spicy, red wine.

Getting the onions, garlic and the carrots into a pot and giving the veggies some low heat for 20 minutes or so.
Meanwhile get some color on the meat, fill in the sieved tomatoes, a bit of red wine and wait until you've got an even color. Put it all into one pot and mix it together. Fill it up with more red wine (I use like half a bottle with the big pot), get the full tomatoes in and the seasoning and let it simmer for 3-4 hours. Fluid has to be nearly gone.

Next cooking attempt. Frozen halibut in a garlic butter with sage leaves and pine nuts sauce + mashed potatoes and spinach w/chopped garlic.

Was good! The halibut was juicy and that sauce was delicious. The only weird thing is the recipe said the frozen -> thawed in fridge for 8 hours halibut was supposed to cook up in 2 mins one side, 3 mins the other side on medium in olive oil pan. It took...14 mins for me and wasn't overcooked (was still juicy). Like I just kept cooking until the center when from light pink -> grey -> once it hit white on the side I could see I took it off. Normally a min or two or three difference from a recipe is normal, but 5 mins vs 14 mins is a pretty big difference, so I dunno what's up with that.

Each ingredient set from Gobble comes with 2 servings assuming you're not a forever alone cooking for themselves, so next time I cook up the other halibut fillet I might try something a bit different with it. I used all the sauce up, so will make something different flavor wise. I've been doing that for each dish so far:

Meal 1: Meatballs & Pasta -> Meal 2: Meatball sandwich
Meal 1: Sun-dried tomato fried chicken breast -> Meal 2: BBQ Chicken sandwich w/Sour Cream & Onion chips
Meal 1: Ham & Egg breakfast pizza -> Meal 2: Ham, Tomato and Green Onion Omelette
Meal 1: Halibut in pine nut sauce -> Meal 2: ??? (thinking maybe something with soy sauce & white rice)

Made fried chicken for the first time tonight. Came out good! Was a little hard to cut without the breading falling off. I'm kinda interested interested in maybe getting a deep frier at some point maybe? Would be nice to be able to make fried chicken and fried shrimp and french fries and onion rings :o

Unfortunately I'm eating way too healthy now. I'm starting to get headaches and feel faint from not eating enough  :'(  For breakfast I have a small bowl of cereal + coffee, maybe some orange juice, for lunch a PB&J sandwhich and maybe some veggie juice and then for dinner a meal like this. I also work out a bunch and just drink water all day and some energy drinks when working out. I'm definitely getting like 1/2 the calories that I used to get before the lockdown when I used to eat out at fast food/restaurants 2 meals a day and would get sandwiches and sides and stuff and starbucks mid-day energy boost snack.

I'm thinking I should do 2 lunches a couple hours apart. PB&J sandwich for one and then fruit smoothie a couple hours later. And maybe a light dessert after dinner to get the energy going. I feel like I'm at my most energy in the morning after cereal & coffee. I used to have yogurt with them too which added another 100 calories or so to breakfast but now yogurt is sold out so I just take probiotic pills but that's still fewer calories.

This feels like when I try to diet haha, I get light headed and headaches and feel like I just want to sleep and lay in bed and not work or cook or game or anything that requires energy. Only lost about 1-2lb in the last few weeks though. At ~129lb now.

The kidney beans have

onions
green peppers
potatoes
tomato paste
adobo
sazon
salt

And recaito which is essentially pulverized cilantro and other herbs. You end up with a sweet and savory vibe that basically acts as the flavor heavy lifter to the rice which simply has salt.

Pork chops were just seasoned with adobo and sazon. Pan fried in shallow oil.

Also used too many bitters because fuck dashes are hard. Also 2oz bourbon seems like a lot. I think next time I might use a bit less. Still a decent start. Also that Angel's Envy is a pretty good bourbon.

Thanks Chronovore, I always wondered how you got bigger/better ice cubes that what comes out of the fridge. Will have to get one of those trays and then give it a try. Definitely looks more visually pleasing for photos.

*edit* watched the video through and I think the toughest part about doing it that way is trying to eyeball measure the size of the ice cube.

Made the Pomelo Sour. It's pretty good! Grapefruit vodka (1.5oz) + simple syrup (.5oz) + lime (.5oz) + elderflower (1/4th tsp) + bitters (3 dashes). I think the vodka being 1.5oz compared to the 2oz in Old Fashioned makes a huge difference in this being more sweet than strong. I should try a 1.5oz bourbon old-fashioned.

Also I need to look up how to sugar crust a drink glass. All my favorite bars do that and their drinks are delicious.

I tried making an old fashioned with 1.5oz instead of 2oz bourbon and sugar crust the glass. Now it tastes just like how I like my old fashioneds.
Wasn't planning on drinking 2 nights in a row (and no I'm not an alcoholic yet), but after an hour of cooking wanted a treat so I tried a 7-up and it was totally flat which was gross, so I just said fuck it and made an old fashioned since my only other sweet drink option was a coke and I don't need caffeine this late.

One thing I'm realizing is either I need smaller glasses or I need to double the ingredients because these drink recipes aren't even filling halfway on the glasses. Makes photos hard!


Oh and I made a chicken with sweet potatoes and diced peppers medley last night and shrimp tacos today. Both just came out alllright. I actually liked the chili mix seasoning on the shrimp but the salsa I used wasn't that great. Also the green onions got burnt while sauteing with the sweet peppers. The chicken was good, it's just hard to cook chicken just right. I'm using a meat thermometer now and it says poultry should be 165f but getting to 165f without drying it out is hard. I honestly prefer cooking stuff I can undercook a bit safely like steak.

From a couple of days ago. Just a honking tbone seasoned simply with salt, seared and then thrown in the oven for a perfect rare center.  Along with three eggs fried in butter using the method I learned from Kojima. Just throw a lid on the pan and drop the temp to let the eggs slowly set after cracking them onto a smoking pan. Some Cholula Sweet Habanero drizzled in top.

Vegan taco bowl. I was inspired by the By Chloe quinoa bowl but I put my own spin on it. I made guac instead of avocado, and a dressing from tahini+lime+cumin+paprika+chile. I also added pickled jalapenos and jalapeno-lime chips. Black beans, rice, TVP "taco meat", greens.

So I bought this mini-cooler and filled it up yesterday and gave it 24H and got it out just now and this did not work at all. Not sure if it's just that I needed more time in the freezer but only like 3/4 inch was solid and the rest was hollow and the solid part wasn't even that clear looking. Will try it again and leave it in longer and see if it's any better but I have a feeling this is pretty difficult to actually do.

Alright, loaded up another batch. My freezer settings go from 0F to -5F. I feel like I should probably keep it at 0F and just let it freeze longer. Going to -5F might mess with the food in the freezer.

Yeah, my second batch froze better, but the problem was it wasn't an even block and carving ice blocks down is not easy with a steak knife (my only serrated blade).

I tried cutting into the blocks and hammer the knife like the video and the ice block just wouldn't split. Eventually got it in 2 halves but tried to cut those down into 1/4ths and I just couldn't cut the ice and gave up.


I got one of those plastic "whiskey block ice cube" trays. While it may not be clear see through ice, it should be about 100x easier to just make some nice block ice cubes for whiskey drinks so I'm gonna use that.

Also with Cuisine, there's nothing more discouraging than when you spend an hour cooking something and it turns out bad and then you still have to spend 30 mins cleaning it up. Pretty much spent all my free time tonight cooking and it was a waste of time. I was cooking up a frozen halibut and I left it thawing in the fridge for 8 hours or so but it was still pretty frozen. It took foreeeeeeeever to cook because the center just was too cold and by the time the center got non-grey the rest was all dried out. Blah. At least I learned that thawing frozen food long enough is pretty important because otherwise this happens.

Ate a frozen hershey pie slice after. Was the best thing all evening.

Nice photo!

So after last night's disaster of Halibut, I got my fresh meats in today and had 2 halibut filets so I used one right away and made a pasta that was amazing. The fennel + cherry tomatoes + garlic butter + fish stock sauce was extremely good and flavorful. Also had a salsa verde sauce on top. Restored my confidence in cooking fish.

 Halibut cooked really well being fresh. Stuck the other one in the freezer but will let it dethaw very very long next time before trying to cook it.

Also made an Hibiscus Gin drink. It's good but I think the recipe overdoes the lemon juice because it tastes less hibiscus and more like a gin lemonade. Recipe is 1.5oz Gin +.75oz Hibiscus syrup + .75oz lemon juice + .75oz simple syrup with lemon garnish.

No pictures, but lately about once a week (usually mondays), I've been making some scrambled eggs & hash & a Belgium waffle & orange juice for dinner and it's always pretty satisfying and quick. I used to eat eggs & hash & waffles as a kid, still pretty bomb. Even as an adult, about once a month on a weekend I'd go to a local diner and get eggs & hash & toast breakfast.

I don't like cooking hash until it's crispy/fried though. Fried meat has like no flavor. I eat it a minute or two short of crisping.

Bought the medium sweet soy sauce but was fairly sparing when I went to cook the rice and in the end I could barely taste any difference from my regular fried rice. :/

On the bright side, I've got a lot left so I can experiment with it more, and also Momo gave me a ton of other Malay dishes to try.

Got a new fry pan. Spent some $$ (not crazy spending, but like $40-50) and got a nice one since I'm cooking all my stuff with fry pans and it's aluminum non-stick which I've never used. Took me a bit to get the hang of it (oil just runs to the edges pretty quick, but doesn't need much oil to cook) but it's working out pretty well. It is a bit heavy so I gotta use two hands.

I've failed every time at making a good tasting indoor hamburger so I was reading up and everything was saying you gotta use a cast iron grill if you're gonna make hamburgers indoors. So I spent all night reading about cast iron which sounds like a fucking pain in the ass (and hot & heavy) as someone who just soap hand washes everything and throws a lot in the dishwasher, but I'm gonna give it a try. Ordered a cast iron grill and cleaning brush/scraper and some better oven mitts since everything says cast iron gets HOT and I'm prone to slightly burning myself and dropping everything I'm holding. Read up on cleaning/oiling after each use and how to season the pan initially. Will put the effort in and see if I can get a good hamburger out of it. I used to eat at least 2 hamburgers a week and I've had like one in the last two months so I miss them...

No one here is black and vegetarian but I'll give this a shot. I love making greens but have no idea how to make greens taste as good as traditional southern made greens without meat product. First I sautee onions, then dump some chicken broth in. Then I put salt pork and let it cook. Then I put collard greens or kale in and season. Let it cook down, then insert another bag of greens until it's full. My dad taught me to make greens this way and his parents before him. It's tradition and it's delicious.

But I have no idea how to do it without chicken broth and salt pork. Water alone isn't enough. You need broth. And pork really brings the flavor out and makes the greens have a complex taste.

One of my favorites to cook :rejoice If you can, look into orderering Tony Chacere. Will help with all creole cooking which is one of my go tos. In the southwest and Louisiana area it's in the kitchen of anyone who knows how to cook. I'm not sure if Tony is available where you live though.

Trader joes has a 2 dollar "chickenless" powdered bouillon that owns. Also liquid smoke is a trick I use for when I need to make something porky  :-*

A good indoor burger seems predicated on developing a great crust in the pan. I've found a high heat with a fatty ground mix smashed into to the pan to create as much surface contact is the best way to go about it. Salt and pepper liberally but I like using adobo in place of salt to give it an extra punch. If it's a thickly formed burger, sear off both sides then cover with a bit of water to bring the center to temp.

These are more on the savory buttery side but in a good way. The sweetness isn't at the forefront as it usually is with cookies. Balanced very well and delicious as hell.

Plan on making his version of orange chicken at some point that uses fresno peppers.

I went to a farm where you can either pick strawberries or pay a bit more and take one of those pre-picked packs. Season is almost over, at least the farm was nearly out of them :/
Bought 1,5kg and I ate quite a few, I still had plenty left for a decent strawberry cake.

I've still been cooking a ton with some real good turnouts (and some nights of nausea from fuckups  :'(). I'll post some good pictures soon. Just haven't been in the mood to be socially sharing right now because it feels like it's so minor in the scheme of the important stuff going on in the world atm (though I still post a ton about videogames so I'm a hypocrite there).

For Father's Day this weekend I got my dad a frozen pizza from Chicago and one from NYC since my parents are mostly quarantined eating food they cook for the last few months and I thought they'd like some good pizza. All the pizza delivery places ship in sets of 2 or more, so I got one for myself of each and received and made the Chicago one from Lou Malnati's.

It was good, but honestly disappointing. I've been to Chicago before and had good Chicago pizza and loved it and there's one place in So Cal called Rance's pizza which does B+ quality real Chicago style pizza.

The tomatoes and sauce were A+
The cheese was good, though not amazing
The crust was....crispy and kinda thin and not a ton of that Chicago cornmeal crust flavor  :'(

I mean the thick deep dish cornmeal crust is what I think of with Chicago pizza and this seemed no more thick than your average California style pizza here. And yeah, the crust was fine but it didn't have a lot of flavor.

Now this is probably because it's been frozen which probably kills/fucks with the crust. I'd be curious to try to get a frozen pizza from Gino's East to see how it compared.

Right now ordering a doordash contactless delivered pizza from Rance's pizza 40 mins away is probably a better Chicago style pizza than ordering a frozen Lou Malnati pizza. Price is probably about the same.

I'm getting the NYC pizzas from Roberta's, and I'll make their frozen Margherita Pizza next week and see how it compares. One thing about the Malnati frozen pizza is that it's as filling as I remember Chicago pizza being. I ate maybe 40% of the pizza for lunch and I feel soo bloated and food coma and good on food for another 24 hours. So including the leftovers, this pizza will last me like 2.5 days of food   :)

So I was making Lobster Rolls from my meal kit recipes/ingredients and they were kind of weird, at least to me.

The lobster meat was already cooked and frozen lobster meat and the instructions were to take it from the freezer and defrost it in cold water for 20-30 mins and then open the package and drain the liquid and then just eat the thawed lobster meat raw with fennel/chives/tarragon/dill/lemon/salt/pepper/mayo in a butter toasted bun.

It toasted good, but I've just never heard of eating meat defrosted from the freezer without cooking it first to kill any bacteria that may have developed. Apparently though they sell cooked crab meat/shrimp meat frozen that you eat raw as well at markets? So maybe it is normal and safe, idk.

I end up in the ER if I get food poisoning because of my gut sensitivity, so this just made me kind of nervous.

Why don't you just saute them? Add some butter, salt and sugar and cook for a while on low heat while stirring occasionally and they're delicious.

Man, I just cooked the best steak in my life (cooking-wise, not eating-wise, not gonna compare to that wagyu Japan teppan stuff of course) and probably destroyed some stuff in the process.

I have the worst fucking ventilation ever in my Kitchen with one of those shitty microwaves above with a filter fan that does nothing so whenever I cook anything on medium-high the whole house just fills with smoke and my lungs get irritated and shit. Because of this I don't even bother searing chicken breasts anymore and just cook them in the oven. Only thing I really sear is scallops and beef bulgogi but those cook up in a couple mins so the smoke isn't too bad. I use avocado oil with a higher smoke point but can't tell if it helps.

Someone recommended that I try using a lid to contain the smoke, so I tried searing a steak on medium-high, flipping it every few mins until it was medium-rare with a lid on and house still filled up with smoke (like literally the ventilation is so poor it becomes visibly foggy in the kitchen/dining room) and my sinuses/lungs/eyes still got irritated. Also used a recipe I found online that said not to use any oil at all and just put the steak on and use the natural grease/fats.

The steak seared amazing, came out perfect and super flavorful. That lid seems fucked though. Cleaned it a bunch of times with light and then heavy duty scrub and the clear lid is still pretty brown cloudy. Also might've fucked the pan a bit too. I'll see when I cook tomorrow.

So probably not going to make a steak again until I get an outdoor bbq again, but at least it was worth it since the steak came out amazing.

I read somewhere that you can cook it on low 200F in the oven and finish with a short sear or even finish with broiling in the oven to cut down on smoke. So that might still be a possibility.

Was talking to a friend and they recommended I look at electric grills for searing stuff without killing my kitchen and pans with smoke. Looked around a bunch and picked up a Phillips Smokeless Grill.

I've been avoiding burgers for the last year because even with a cast iron I feel like hamburgers cooked in a skillet pan just don't taste right. Will try burgers/hot dogs/chicken breast/steak on this thing and see how it goes...
