we usually take it and marinate it over night... cook it at a low temp in the oven for a few hours then grill to around medium rare... awesome shit... my broke ass had vienna sausages for dinner tonight...  :-*

sure ive considered it... but i want muscle not just a patch of skin... ill have to kill a hooker one day and skin her... :) albert fish claimed the ass was the best part... he would roast it with bacon and onions... mmmmm id love to wash it down with a nice wine...

Back on topic, I cooked it in the over in a unique oil and wine based glaze, with a variety of spices sprinkled on the roast, in the over for about an hour.  First, I cooked it at 425 for about 20 minutes or so, then brought it down to 325 and glazed it some more.  Then I moved it quickly into a pan filled with potatoes and carrots, all marinaded in a special mix of wine and olive oil and spices.  It'll sit in the oven for another 40 minutes or so.

Well, here it is, guys... last night's dinner.  We served it with carrots and potatoes.  The potatoes were done, but the carrots could've sat in the oven a little longer.  But somebody was pressuring me to hurry up, so we had to make do:

Lamb is a bit hard to find in the Southeast US, that's for sure. Usually I can score some, just takes a few visits.

Europe or North Africa would be a whoole lot easier, that's for sure.

Last night I did some venison meatballs and a pasta sauce with some whole wheat pasta. A while back I traded an old mattress and box spring for 20 pounds of game-caught ground venison and fifty bucks-I got the better end of the deal, but man it takes a while to slog through that much meat without getting tired of it. Even if it is yummy bambi meat.

It's a recipe given to me from family and it's a secret.  It takes two different phases and the main, super ingredient is red wine.  But there are a lot of herbs, two different oils, spices, other liquids and stuff involved.
