So EvilBore, what can you cook! Post your cooking tips and recipes if possible.

Since I'm living by myself, I've had to cook for myself a bit. I'm far from a good cook, but there are some things I really know how to make.

BAKED POTATOES

If you have some veggies and maybe some chicken to heat up, a baked potato is a great addition to your meal.

1. Boil the potatoe in salt water (at high) - 20-30min


The best way to add salt to a potato is to boil it in salt water. That way the salt is cooked into the potato.

2. Bake potatoe in oven - 40min

Wrap the potatoe in aluminum; before you do that you can add some more salt onto the potato if you want. After that just put it in a pan and put it in the oven.

3. Once done, add cream cheese

Once you take the potatoe out the oven and unwrap some of the aluminum foil, poke it with a butter knife. The knife should go through the potato like butter. Now slit a line down the potato, and gently seperate it (without breaking the potato). Add some cream cheese down the middle and you're done!

Since I don't have any butter in my house I can't add any to the potato. If I had some, I'd probably wipe the aluminum foil with butter before wrapping the potato in it.

Tamari
Fresh Pineapple charred
Green onion/ Negi charred
Fresh garlic grated
Fresh ginger grated
Fresh Jalapeno diced
dash of red chili flake
1/4 cup mirin

Cook it down with a little water till it thickens set aside. Take your pork and sear it on all sides over med/high then put it in a bag and pour marinade over it. You can sous vide it if you like or leave it overnight. Make sure you keep excess sauce and reduce it once you've sous vide the meat. Enjoy with rice and softboiled eggs, top with fresh cut green onion and tempura flakes.

Next time I'll use all regular soy than a mixture of light and regular. It needed a pinch more salt. Other than that, its sticky sweet and works very well with the pork. Also, invest in a food thermometer when cooking pork please. No one wants 190°F internally cooked sawdust textured pork. I cooked mine to 150-155.

I started doing something I've never done before: making hard boiled eggs. I have a recipe.

1. Buy Eggs

You need eggs to make hard boiled eggs, so buy some. I buy the brown ones because they're supposed to be healthier.

2. Boil water

This is step 2 for a reason: you don't want to boil water until you have the eggs. What I mean is, don't boil water and go to the store. You could burn your house down.

3. Put the eggs in the water

I made the mistake of kind of throwing the egg in the water. It cracked...I was still able to eat the egg but yea brehs, be careful. Use a spoon to lower the egg into the water. You want to boil it for about 12-15 minutes

After that you just take the shell off, cut it in half, and add pepper. I also add a tad of garlic salt.

Shosta do you have bottles of Mojo in your area? Try making it Cuban style by marinating it in mojo. Roast it and then pan fry it with some onions, a bit of minced garlic cloves, and some lime juice and you're good.

Stupid easy drumette recipe:

Bring 1 ˝ - 2 cups water to a boil, then add 10-12 chicken wings (separate them at the "elbow"), add 1 cup of ponzu or equal amounts soy-sauce and rice vinegar. Reduce heat and let cook down until the liquid is only about ⅓ to ˝ its previous volume.

Place wings on plate. Don't mess with the remaining liquid. It will gel into a sour, chicken-fatty mass that will discourage appetite.

Let wings cool a little, top with toasted sesame seeds and/or finely chopped green onion.

I'm also making a slow cooked pork shoulder on Wednesday. I've tinkered with ways of getting a strong flavors inside the meat. Outside marinating, then I tried injecting. Now I'm going traditional with the way I was taught at first, making inch long deep cuts into the meat and stuffing the holes.

The holes are filled with a mixture of crushed garlic and dried oregeno with salt. Used a mortar and pestle for that. I also scored the skin so when it does crisp up its easier to break apart into bite size prices. The exterior was sprinkled and massaged with sazon and adobo.

The meat itself will be cooked for around 8 hours at 270° covered, and then 400° uncovered until the exterior develops a crust.

<3 i made some fusion jerk chicken recently using a v similar marinade overnight, but after marinading the chicken thigh pieces i rolled em in potato starch and deep fried while putting a little gochujang in the marinade left in the bowl and reducing it for the glaze. got the idea in Seoul from a place called Reggae Chicken. mine wasn't as great, but still worked well in a slightly different way.

Such a light sauce considering it has heavy high butterfat layer dairy product and parmesan. The lemon zest snd juice adds a wonderful pop and brightness to the party. If you plan on making this though I suggest adding half the lemon juice at first and tasting before dumping the whole thing. It easily takes over the other flavors.

The chicken was just fried in oil with adobo and an Italian herb blend.

Tomatoes maybe? But that could get mushy in a panini. Theres also pickled vegetables. Pickled peppers in particular could be up your alley since theyd be acidic. If youre into jalepenos that could be what youd want.

I made a herb butter turkey last year that was real good but I used a deep dish to cook that turkey which inhibited browning. I know better this time.

This shit is so good. It has a typical base but she drizzles in 2tbs of sweetened condensed milk into the braising liquid before you cover it up and let it go for 1 1/2 hours. And that sweetness definitely comes through. It works very well with all the other seasonings that make the pork savory, giving it this sense of depth that makes you keep breaking off more chunks of meat. Amd this is me eating it straight up, I can only imagine how it tastes with your typical taco accoutrements.

I went half on the citrus since I'm not a big fan of citrus notes standing on equal footing with everything else since it can be overpowering. I wanted more of that condensed milk flavor. Could have maybe used a little more salt but thats probably just me and years of hammering my tastebuds with Goya adobo seasoning.

Now I feel like Charlie Day was onto something with milk steak.

So i used this method of braising pork in its own fat over the course of 3 to 4 hours at 270°F. Seasoned it simply with adobo, sazon, a little bit of salt. I also strategically placed six garlic cloves and three bay leaves broken in half.





What you end up with is pork that is seasoned in every bite. And, after having put it under a broiler to finish it off every bite has this contrast of soft and crunchy texture. This isn't possible when you try to cook a whole shoulder on the bone.  It requires prep work to debone the shoulder (or buy a boneless one) but I think I'm done with cooking a whole shoulder now that this method is known.

What you end up getting is a whole bunch of, equivalent to, fall off the bone rib meat. But instead of getting a miniscule amount of meat from said ribs you're getting many pounds worth of well seasoned meat.

Ramsay has been like that for ages, he bounces on the balls of his feet in nervous anticipation or energy.

On his shows he's often doing it while other people are talking and he can't wait for them to shut up so he can tell them something.

I think it may possibly be some soccer thing? On the one Kitchen Nightmares he was playing soccer with the kid of the family or whatever and he was doing it the entire time on the field when he didn't have the ball.

edit: Ramsay was semi-pro in soccer, not a star or anything certainly but apparently was good enough that he would have been able to play it professionally (at least in England?) if he hadn't chose cooking instead.

Hong Kong crispy fried noodle. It doesn't look like there's any sauce but it's drenched in this savory fish-sauce/sesame oil/chicken broth. The noodles came out very crispy from the wok but once I added the sauce it achieved the perfect texture.

I'm at my parents' for xmas so my mom is doing the cooking, many kinds of traditional nordic christmas dishes. I'm full just thinking about it. My sister is bringing a self-made malt rye bread, that topped with the christmas ham :lawd :dead

All cooking I'm trusted to do is a cake, so not cooking. I hope I can make it taste good and look nice at least. I don't get who will have enough room for cake after all the other food though.

It's too late but I feel pasta is a great ice breaker dinner to bring someone into your culinary interest. You can easily scale it from a simple noodle dish with a simple sauce to something a little more involved to flex your skills a bit. Can scale light to heavy too. Pairs well with wine etc

Absolutely nailed the brisket yesterday.

It was 8.3kg total weight. 10 hours in the smoker at about 120°C, salt and pepper rub, two hours rest. My best mate messaged me this morning saying all he could think about when he woke up was eating more brisket.

I would if I could G. I think I'd be killed though as I'm still getting messages about leftovers.

I was super happy with how it turned out. I've done a couple of smaller ones previously, and they turned out a bit dry, so I was a little nervous about doing such a massive piece. Worked out unbelievably well though and I got through the stall without having to wrap it so the bark was phenomenal too.
