I don't think they can get Diddy Kong Racing, because it has Banjo and Conker. Iirc WiiU Virtual Console also only got DK64 ( :kobeyuck ) and never DKR. Also some other decent games like Rayman are all by 3rd parties that never provided anything to these collections. Obviously, Capcom, Square, Konami, etc. are all Playstation (but I kind of feel that PS Classic will drop the ball).
Minecraft is a universal brand and crossplay was a good opportunity for console war marketing, but I don't know if they'd go as far as sharing their games for this :doge - especially the ones they are themselves selling right now through Rare Replay. It would be a good way to generate more goodwill for N64 than it deserves though, since this would be a positive surprise.
Diddy Kong Racing was released on DS in 2007 so I don't see why they can't do it again.
But yeah, slim pickings for the N64 and many of the games on Bork's list don't elicit the same nostalgia value the NES and SNES games do so the incentive for Nintendo to make an N64 mini is probably even less.
Remember when EA made a sequel to Goldeneye but it wasn't about the movie it was about a guy whose eye was gilden?
N64 controllers... :larry I had one like this relatively early on, which felt somewhat normal/modern.

is almost always optimal.
And the way the z button is right under the analog stick always felt so damn smooth especially playing a game like Zelda. Probably my favorite trigger button.

Multiplayer racers where you can shoot things at other players were kind of a thing on the console. Road Rash 64 is another that's not frequently mentioned. Had the most amusing vehicle combat of any of them. Whacking other bikers with giant bananas and spraying them with mace as they collide into oncoming traffic never gets old :doge

Road Rash is one of those racers no one talks about period anymore. It’s just dead.
I mean road rash’s last game was in 2003 and on the gba and a reboot isn’t the best evidence that road rash isn’t a forgotten long dead property
