This, really depends on what you mean for Chinese. Americanized is alright, in a fast-food sort of deal, but I'd put Indian over it.
Authentic Chinese meanwhile edges out Indian if only because it is possible to ask for deboned chicken/etc. in authentic Chinese places compared to authentic Indian.
I'd still put them over Korean and Vietnamese food, meanwhile.

It's a risk vs reward thing. Chinese is usually low risk and when it's good it's pretty good but when it's bad it's just bad. Indian is the opposite. High risk. High reward. When it's bad it's terrible. But when it's good it is amazing.

I spent about a month in India, and about a month in China, and I know for damn sure which country's cuisine I would love to go back to.
I did get horrific food poisoning in Jaipur and lost 30 pounds, but I'd do it again. There was this restaurant above the ghats that I'd go to every day after my sitar lessons in Varanasi. So good. Plus bhang lassis.

Yes, yes, certain cuisines that developed along The Spice Route seem to have that problem compared to similar ones slightly farther inland or were bypassed. Like I always thought Thai food is more judicious in its use than Vietnamese, and the route generally went along the Vietnamese coast and then skipped past Thailand/Siam to go around Malaysia.

I could live on a diet solely consisting of szechuan hot pots, xiao long bao and zha jiang mian for a few years and be quite happy. Just been tryna scrape the surface of Chinese food the last few years to figure it out. I love Indian, but haven't had enough experience with it to really know what I love. I grab a dosa for lunch sometimes and rotate around the western standards: saag, rogan josh, korma and tikka'd stuff for dinner. Have been to some incredible South Indian places but don't remember the names of the dishes.

I had some incredible Korean BBQ in Bayside the other day, the kalbi in particular was insanely good (also pretty pricey). Vietnamese is so blah to me, I've tried multiple times and every single time I've come away disappointed.
For Chinese, szechuan is my go-to. Lamb cumin my dish of choice.

despite eating way more chinese, some of the best meals i've ever had were indian/paki food. i love exploring the regional differences in a simple dishes like butter chicken, which from my understanding varies greatly not just by region, but from town to town. though it's fucking hard to find excellent butter chicken or even indian/paki food to begin with and that in itself is the greatest hurdle :'( :'( :'(

there is soooo much variety/depth (https://en.wikipedia.org/wiki/Chinese_regional_cuisine) to regional chinese cuisine. most places i go specialise without actually saying anything about it. having a little knowledge is pretty helpful in dissecting things as menus can be pretty stacked w challenging stuff
idk where you live, but i would start with tryna find a good hand pulled noodle joint (eg the dish i mentioned Zha Jiang Mian is my favourite cheap pulled noodle dish), and somewhere that specializes in szechuan/sichuan dishes (prob most popular and celebrated chinese cuisine, and usually the most common specialty restaurants). i dream of eating good szechuan hotpot.
