I'm poor too, but I made a bean, rice, and beef burrito with fresh grated cheddar. It's easy once all the prep work is done and it's super cheap.
Prep work:
put the black beans in water overnight, drain and rinse them, for one cup of beans you'll want around 6 cups water, simmer them for about 1.5 hours.
The rice is much easier, just put in about 1.5 cups of water per cup of rice and simmer covered for 45 min to an hour... I then add a can of El Pato tomato sauce, it's spicy but not too much
Brown the beef (add another can of El Pato if you want.
Shred the cheddar yourself.
DELICIOUS!!
