Best way to start a wiki website?

I'm looking to start a wiki based website.  I see a lot of different sites out there offering free wikis but I'm having issues with two things:

1.  A lot of them don't offer ways to backup my information and they seem to delete wikis at will.

2.  I want to be able to migrate the information, but a lot of them use proprietary wiki applications, so when I eventually want to move it to my own, I will be fucked.

And I have a question: Do these websites actually own the content I put up there?  Will there be any issue when I decide to take it and turn it into my own site and try to make money through ads, etc?

Should I just buy a domain and hosting and use a wiki application?  Anyone know how that works?  Have any recommendations?  Thanks.
