So this is like Burnout x Destruction Derby x Trials mini-games?

I'm playing Ultimate Carnage and the career mode was kind of mehh.  It was like Burnout except you don't get the awesome "you just smashed a guy and made him flip!" scenes, instead you just do little hits here and there and get some boost.  The game was also hella ugly.  And the tracks were 3 laps which is 1 lap too many for an arcade racer.

Then I tried the Carnage mode with all these varied events and it was GREAT.  The Carnage races using a super fast car that went 10x the speed of my starting career car made the meh races into intense OH CRAP 100MPH I AM CRASHING races.  The Destruction Derby gave me nice flashbacks over Psygnosis' Destruction Derby and the other mini-games were interesting (I don't quite get the launch the guy out the windshield one though). 

So I'm guessing in the main career mode when you get faster cars it starts getting pretty cool on its own?

I like all the destruction as stuff falls apart and the shortcuts everywhere on the track.  I also like the lack of rubberbanding, so if you get ahead you're safe, but if you crash once it'll be tough getting 1st by the end. 

Sort of sold on it, maybe.  Will give it some more play. 

Anything else I should know about how to have fun with the game?

I remember playing the first one, it involved me ragdolling myself through the windshield. The PSP port is quite fun too. Just lots of big dumb fun stunts.

Remember when everyone was so excited about the stuff Motorstorm was doing? Flatout was doing it on Xbox (not 360) and PC.

Ultimate Carnage is brilliant, some of the tracks are spectacular and virtually everything that isn't tied down is an obstacle that can be moved or used. The main career sort of sucks because the AI gets nasty and there's 3 groups of cars, the slow, the normal and the fast. If you fuck up a few times and don't have much nitro left then you're screwed. You have to have a clean run to catch up to them. Not saying it's not fun, because it's so unpredictable but sometimes the races are annoying

I was never able to get into this game. I started with Flatout 1, tried 2, just couldn't figure out what the hook was supposed to be other than windshield cannoning.
