I just reheated some frozen chilli I made a month or so ago.

This shit so fire. Last time I did a split chili which simmered more and a chili mac for dinner.

So now I took the frozen chili and made THAT into a chili mac (with penne sorry) fucking delicious. I don't even know what I put in here, but I'm pretty sure it was a bunch of latinx peppers.

I made some ramen last night, and I used some chicken stock I had in the freezer.

Cut up some onions, used some frozen scallions.

Tossed in some veal heart left overs from the weekend.

Little bit of sesame oil.

My girl loved it and thought it was amazing.

I was like "yeah it's ok".

So this is pedestrian, but I started making popcorn on the stove.

I haven't quite nailed it, yet, but I'm loving it. I also make cancha (peruvian corn) and it's like the same process but they don't "pop".

I'm totally gonna spice this up next time

I haven't made popcorn on the stove since I was a kid. I don't think my kids have ever seen it done. I have a bag of popping corn in the pantry that the kids brought home from a trip to the grocer with their grandmother. Could make a fun school holidays activity.

I've been trying to tear down anything I eat down to the basics.

I did alton browns trick of pulverizing salt in a grinder

it works but I totally messed up the ratio, super salty

I love going down to base.

Christmas Eve dinner is well underway.

Glazed ham (about to start glazing soon), lamb leg, pulled pork, chicken and jacket potatoes.

Got some coleslaw, pickles and cheese ready for some pulled pork sliders, others are bringing potato salad, pear and rocket salad, proper Indian chicken curry and dahl, pastitsio, tiramisu, pavlova, chocolate cake

Got back to work today, then went shopping and the entire day seemed like a waste of time until I decided to clean out my freezer of turkey carcasses and mire poi remnants.

It's my kind of food show. I don't care so much about the process of cooking, but I do love exploring the cultural significance of the food being eaten. It's very easy to see Bourdain's footprint on so many recent food shows.

Had some leftover pork steaks that I cooked in the BBQ, so I decided to make a nice sandwich.






Crusty Vienna bread, pork, cheese, pickles, corn relish, mayo, BBQ sauce. I would have put tomato too, but I ran out and forgot to buy some more.

OK, let's start with some pork belly ramen with shitake mushrooms. Lesson learned: don't use dried mushrooms. Otherwise good.



Next up, cooked some picanha on the grill. Salted and left in the refrigerator overnight to get that nice crust when cooked.

This is probably my favourite cut of beef. So much flavour while still tender. Doesn't take much cooking either.





Last of all is a BBQ I had when we visited family in New Caledonia.

Rib on the bone, picanha, pork chops and sausages. Had it with BBQed vegetables and jacket potatoes and fresh French baguettes.
