Absolute revelation.

Believe me, if you cook with charcoal, then you need to get an electric charcoal starter.

I had a load of charcoal lit in less than 10 minutes without smoking the house and the neighbours out.

I will never again use firelighters.

AU$40. I was happy with that.

The fact that it's basically a heat gun makes it superior. Works like a car turbo by blowing super heated air into the fire, which speeds combustion up and gets things going quicker.

That chicken soup is like 75% of the way to aguadito!

blend up some cilantro, cumin / onion / pepper and then re simmer for ten minutes.

I dated a Romanian girl for a few years and her nor her family had any idea how to cook and would just usually microwave tendies or do takeout. It's a shame since I've had some other south slavic cuisine and it's pretty good, I'd imagine Romanian cuisine has a lot of Turkish influence, which is one of my favorite cuisines.

But yeah even beyond the Romania thing, that list is super odd. I'd have expected stuff like Chinese, Indian, Korean, Turkish, and Mexican to place higher. Vietnamese cuisine not on the list (even if I'm not a huge fan) is wtf... I can tell you at least around here there are a lot more Vietnamese restaurants than say, Slovenian or Lithuanian (and you bet your ass I have searched for Lithuanian cuisine in NYC). Even in middle of nowhere Huntsville Alabama, I recall going to a Vietnamese restaurant. Also no Ethiopia on the list either, that's a super underrated cuisine (as is Uzbek).

Yeah I'd imagine it's very similar to Serbian/Bosnian with some Turkish/Mediterranean influence. Just had to make the obvious CV joke :P

I never thought I'd be in a place where I would make chicken stock from scratch in advance with left over veggies and chicken carcasses to make some fondant potatoes, and preseason a steak the night before so I can cook it a carbon steel and finish in a broiler.

I didn't cook it, but had this in Chicago over the weekend. I thought it was gonna be terrible because it had a super fishy smell but it was good. I like fish, the smell was simply kinda strong but they smoked the fish which was interesting. Don't think I had ever had smoked fish before this.

Very interesting video, one day we tried a Senegalese peanut chicken dish from Sunbasket. Not sure how authentic that was but it was alright, a bit on the flavorless side. Sadly there's a dearth of West African restaurants near me, it's a cuisine I'm more interested in trying and learning about.

Getting this ready for the smoker tonight.


A 7.9kg full packer Wagyu brisket 4-5 marble score.

Going to cook it in the offset smoker overnight so it's ready for Sunday night family BBQ dinner.

Probably just salt, pepper and garlic powder in the rub, try to maintain a steady 120°C for the whole cook and trying to bring it up to a 90-95°C internal temp. I'm expecting about 12-14 hours or so cook time.

Will serve with coleslaw (mayo, red wine vinegar, seeded mustard, celery salt dressing), small dinner rolls, pickles and some good cheddar cheese. Might make some potato salad too.

Made some porkchops.

Did an hour brine, that supposed to be 4/5 hours, but still worked.

The porkchops where a little thin like 3/4" or .02 meters.

They came out pretty good, sauteed some onions with the fons soy, homemade chicken stock,  and worchesteeredres sauce. Forgot the butter.  stlll came out tasty.

I need to work on doing pork more often. This thiamine kick always feels great.

Speaking of pork, I went hunting on the weekend and we got a nice young sow for the pot.



We usually organise a group dinner with the meat we harvest, so we took the back legs and the back straps and one of the guys is planning to make some sort of Malaysian curry with the legs and then wrap the back straps in prosciutto and cook in the Weber.

First step with game meat is to give it a bit of a vinegar bath to tame the gaminess.



Then on to the deboning


The best free-range, grain-fed pork because it's been eating sorghum for its whole life, just packing on the fat and flavour.

Let's post cheap ass comfort food recipes.



Himu's Ramen Noodles Recipe after living with two Chinese women for a few years

Ingredients:

- Ramen instant noodles packet (I use Maruchan). If you're really hungry use two.
- Spinach
- Your favorite canned vegetables (I like corn and kimchi)
- A big ass bowl
- Chopped chives
- soy sauce
- kosher salt
- black pepper
- onion powder
- garlic powder
- Creole spice blend
- sriracha if you want kick
- garlic chili paste if you want extra kick
- One fried egg

Directions:

1. Get pan and a skillet.
2. Put ramen noodles in pan. Water level is important. If one ramen pack fill up water to cover only the first half of the ramen block where it starts to fold. Leave the rest dry. If cooking two, use enough water to cover an entire block and leave the second one sitting on top.
3. Turn pot with ramen and water to high till it boils. Cover for speed, uncover for slower speed.
4. Fry egg in skillet while ramen boils.
5. Once the bottom of the ramen block is soft and the water is boiling slightly flip the block over to cook the other side. Cut heat to medium.
6. While it cooks grab a handful or two of spinach. Cover and let it wilt.
7. By the time it wilts the water level should pretty small. Stir wilted spinach into ramen.
8. Get soy sauce and put it in the ramen. Make sure it's well coated but don't use too much. Stir so the ramen is coated in soy sauce. The noodles should now be a nice brown.
9. As the water evaporates the material from the noodles and the soy sauce will help create thicker sauce that's almost starch like. Think of when you cook potatoes, it's like that. It's delicious.
10. Add in chives, salt, pepper, onion and garlic powders, any other seasonings to your ramen which should now be stir frying.
11. Cut up the heat back to high to stir fry.
12. Stir for a minute or so and cut to simmer.
13. Take egg out of skillet and put it in your bowl.
14. Get skillet and heat up canned vegetables you'd like such as corn or kimchi that I like. Not cook, just heat.
15. Take egg out of bowl. Put noodles in bowl. It'll be a beautiful brown with a nice tasty starchy sauce. Put egg on top.
16. Put the side stuff like corn and kimchi off to the side. Should be a reasonable amount.
17. Get some sriracha or chili garlic paste and apply to ramen.
18. If you want it more soupy like traditional ramen use more water.
19. Bam.

Cheap as fuck, doesn't look the best but delicious.

Okay so today I decided I wanted to make me some ramen comfort food. I did all of the above, then drained the water, fired up a skillet, put some canola in it and fried them noodles.

Much better presentation as I am afforded natural light here.

No chives this time. Use white onions if you want.
