God damn y'all, I am on a fuckin' Pho kick recently!

It's a Vietnamese standard, sort of like their version of Ramen. You order up your shit - usually with funky style stuff like rare tripe & tendon, but you can also get brisket and flank and steak and you can also get it cooked instead of rare (although the broth cooks the rare meat like Shabu Shabu). There's also a gang of rice noodles up in the bowl, waiting for you to slurp down. Now most places I've gone to have had real thin slices of onion and cut-up scallions in he broth as well, but I guess that's depending on the joint. You also get a dish of jalapenos, bean sprouts, basil and lime - again, this varies on the restaurant but those things seem to be pretty standard - that you should put into the soup to bring out the flavor. I wasn't going to throw any fucking basil in there the first time I had Pho, but it was kinda bland so the 2nd time I threw a gang of it in there and I immediately tasted the difference - MUCH better!

Anyone else enjoy a good bowl of Pho? Is this just a southern California / Vietnamese thing?
