They probably applied some type of seasoning to the meat that isn't wet nor was it marinated. You just take the seasoning and apply it to the meat dry.

Disposable White Guy makes a mean ranch burger - where you take that powdered ranch dressing and dump it into the ground beef, then grill it.  It's awesome.

After reading the site itself it definitely looks overwhelming to make.  It should be worth it though, I'll just borrow some latex gloves from the meat dept where I used to work.  Salt shouldn't be an issue, I looove salt.
