I've had undercooked hamburger from one of those ground beef logs and that was fucking gross.  Medium rare is the only way to eat a good steak, though.

Not that rare, but medium rare > well done. It just tastes juicier. I feel like you get a husk when you ask for it well done.

Medium well is the max I go.

I like medium steaks, but I'd never eat an undercooked burger. The reason even rare steaks are safe to eat is because e.coli and all that only live on the outside. Cook the outside for 10 seconds or whatever, and that's all gone. But when you have ground beef, what was the outside is now all over the place. It's just not safe to eat a bloody hamburger.

I don't eat more than medium.

I usually ask for medium rare because restaurants always go one level higher than you want. I'd be happy with a strictly defined "medium," but whenever you ask for medium it's brown straight through.

The worst is lately restaurants won't accept an order of medium rare, only medium. So you say medium and you get fucking well done. I don't stand for that shit.

I stick with medium-rare, usually.  Nice crisp edges, juicy pink-red interior.  Add some steak fries so I can sop up the juice, and I'm all set.

I've eaten steak tartare at a chistmas party a few years ago.  Never doing that again.  Pretty nasty, imo.

It was probably badly prepared.  It should be hand chopped or minced with a knife, not ground in a grinder, and always chilled.

I'm positive that people who don't like meat medium-rare at the least are just not very 'adventuresome' eaters in general.  It's really the only way meat should be cooked.

Yeah I agree.  My rule is to try everything once.  I grew up in a family that cooked all their meat well done.  I rebelled against that.  There's a lot of great raw meat and fish recipes from carpaccios to tartares and sushi and sashimi.  Caviar is also technically raw.

You're basically ruining your steak if you eat it medium or higher.  Burgers I can see medium / medium-well, but I try to eat / get my food at places where I don't feel I have to worry about it.

Eh, there's levels of safeness. i wouldn't recommend eating a burger like that from Applebees. i've done that a few times, and despite the fact it's delicious, i get a mildly upset stomach afterwards. But if you go to a restaurant with a good reputation, i really don't see the harm in it.

If you make your own ground meat, it's generally safer. Just take equal amounts of cubed sirloin and chuck, toss them in a blender, then tap blend a few times until they have a kinda ground meat consisency. Usually that's about 10-15 times. Add a dash of salt and mix them together. Cook as usual. Next time i do this, i'll probably add some lamb to the mix for that nice mild gaminess.
