I just made the best Scrambled Eggs ever...

I used that foul mouf brits technique (of Hell's Kitchen) of taking the skillet with the egg and milk concoction and taking the said skillet off and on the stove (while scrambling the eggs). It takes a little forearm muscle but what you end up geting is the most moist scrambled eggs of all time. I didn't even have to add salt since the fluffy eggs carried the milk well.

God, Saturday started off awesome

awww   I do them the mexican way actually. 

-decent amount of grease so they don't burn
-move that shit around with a fork or spoon

but i hardly ever make scrambled eggs.  fried eggs is where it's at :drool

try using a little bit of plain coffee creamer (the liquid kind) when you're cooking scrambled eggs next time, gives them a really good flavor

That's actually the classical french style, BT.  Ramsay, though Scottish, is a classical trained chef in the french tradition.  The trick with eggs is to use gentle heat, hence moving the pan on and off the heat.  Too much heat gives egg a rubbery texture instead of the creamy, fluffy texture that is desired.  Adding butter while cooking the egg also improves their flavor dramatically.

Yeah, the texture of the eggs was fantastic. I was worried that it would come out weird since it was turning into a paste at one point but I kept working it and the scrambled eggs started to form. I didn't add any salt or butter due to me trying to cut those things out of my diet but the taste of milk in the eggs itself was good enough.

A friend of mine introduced me to the most amazing scrambled eggs ever. All he did was scramble them, like and person would... but then he added Lawry's seasoning to the eggs.

"OMFG!" I screamed but it was pretty unintelligible since it sounded like "ohmmfguh!"

After that I bought some Lawry's on my next grocery shopping excursion and have never looked back.

He seems to cook them a little too soft for my tastes but when you leave them in just a little longer, they become firmer but still fluffy as hell. Love that technique.

I'm also going to check into the Lawry's seasoning. Since I pretty much only eat scrambled eggs on Saturday morning, some salt wouldn't hurt :D

I didn't even use the creme fraiche, I would imagine you would use it to make the eggs even creamier (which I wouldn't want anyways, I'm fine with them just being a little wet and undercooked). Give it a try.

Yep and as PD stated, your going to need to stick with the eggs the whole time. I made them again (for the picture) and I actually cracked the eggs into the skillet and scrambled them there...I didn't use any butter either since I'm trying to get away from eating any fatty like that but I'm sure the texture will come out even better with some butter.

Do the technique your doing (you can cook eggs for up to 30 minutes like this, a la James Beard) but add a little bit of cream in addition to the butter and some fennel and a touch of garlic.  You'll get the best scrambled eggs ever.  :drool

That's one of favorite ways of cooking eggs.  I remember cooking them when I was 14 and my mother was blown away.

I made some more today. This time I added a slice of cheese to the eggs while still stirring. The result was absolutely amazing. The cheese was cooked right into the eggs, creating a delicious flavor blast omg
