Lost Odyssey - 40 or so hours I think?
Rock Band - mad time
N+ - I wish this had an ingame clock, I spent a ton of time on this
Saints Row - 35-40 hours iirc
CoD4 - 25 hours just on online
Halo 3 - I play this more than CoD4
Gears of War - probably played this more than Halo

i don't think time spent in regards to clock time is fair because lo and bd are just longer games than most 360 games. however, dead rising, i've played it over and over and over but haven't really clocked more than 30 hours.

Crackdown. Don't know the actual time, and it probably won't seem impressive by the standards set by Mountain Dew guzzling, couch-potato twits everywhere, but it kept my attention for quite some time.

150+ hours into Oblivion and I loved every second of it (other than the vampirism cure quest)

I've put at least 80 hours in Mass Effect, going for all the achievements was a huge pain in the ass and it took me almost 5 playthroughs and it felt like work the last few times.

In terms of game clock Lost Odyssey, 87 hours and still dont have Treasure Trove. got 1000/1000 in Blue Dragon in 78 hours

I haven't actually checked times, but I'm guessing it would probably be Dead Rising. It's still probably the most enjoyable experience I've had on the 360 so far, I can tell it'll be a game I look back on nostalgically in the years to come.
