Not a cooking post per se, but I feel that this is probably the only place on the Bore that would appreciate it.

Went to Bin 941 up in Vancouver, BC tonight for my wedding anniversary.

1. Goat cheese, house dried tomato salsa, Navajo fry bread.
2. Flank steak, cinnamon chilli rub, maple syrup chipotle glaze, black pepper pommes frites.
3. Duck breast, fingerling potato hash, truffle oil, haricot vert, port cranberry jus.
4. Angus beef shortrib, cauliflower goat cheese puree, peppercorn cabernet jus, crimini spinach salad.
5. Cheesecake, strawberry rhubarb compote.

OMG as usual.

Been having a crazy craving for pho and spring rolls the last couple weeks (I'm usually not a huge fan of spring rolls).  We tried this place out recommended by my sister and it was pretty good stuff.  Decided to get a lotus salad instead of spring rolls since we've never had it before.

(You are not mistaken.  There is no cilantro.  Fuck cilantro.)

Man that hit the spot.  :9

I didn't have the japanese bread crumbs so I used italian ones, came out wonderfully. Tasted a lot better than my deep fried ones, which never seem to work

The wife got a recipe Friday night that she wanted to try out.

Salted and peppered some pork chops and put a little olive oil in a pan and fried them on medium for 7 minutes on each side.  Good stuff of course.  But the amazing part was that the recipe called to cook up some pineapple with bits of jalapeno in it.  FUCK!  that shit was so good.  Slightly spicy pineapple is fucking amazing.  She made some jasmine rice and the pork chops and put the pineapple on top.  It was fucking awesome.

last night I made some French bread and then we boiled a couple of eggs and made a few pieces of bacon.  then we made sandwiches from the bread, egg and bacon.  God it was so good.

I know it's been a few weeks but do you remember what kinda marinade you used for the flank steak? I do a lot of flank steaks myself - usually with a crushed red pepper/black pepper/teriyaki sauce/worcestershire sauce/salt marinade.

egg and breadcrumbs help to bind it, season with salt, pepper, garlic and put your sauce on afterward!

The bigger they are, the more likely they are to break apart. Make sure  you get all the air out of it first, and that it has a pretty solid consistency. Add more breadcrumbs if you think it's too soggy.

It's a Greek meatball soup with a lemon egg thickener.  The meatballs use rice instead of breadcrumbs.  It's very yummy.  :9

For instant flava you can put in some french onion soup mix as my mum always did, though now she's switched to steak spice and I've done the same. I got a freezer full of homemade patties wrapped in lil sandwich bags. Even if I'm not in the mood for burgers I just break 'em up in a pan and ad whatever sauce and veggies I have - quick and easy.

Did you soak it in buttermilk first?

No.  I was planning on doing that at first but I couldn't find the buttermilk (turns out someone hid the carton at the back of the refrigerator).  I ended up brining which worked out ok.  I'd like to compare the two methods side by side next time.

I love the summer because its the season of berries of all kinds.  Fresh berries are much more affordable during this time of the year.  I got some blackberries and made some pie.  The only problem is working with pie dough in such humid temperatures.

I was cooking tonight and I wondering what a good way to season vegetables (broccoli, mixed vegetables, stuff like that) without using salt was. I cooked them steamed. Nothing fancy. Just your basic steamed veggies and I I didn't know any good ways to season without salt aside from using natural stuff like onions and lemon. Suffice to say, the food came out average.

I seasoned my Talapia with lemon too, and that came out meh. Sigh.

A little salt is good for you man - great way of getting vital minerals. Be sure to use the good stuff though, otherwise it has the opposite effect.

I really like using black bean paste, foo yu (I'll look up the english name in a bit) and/or haam yu (have to look this one up too).  I think they might have salt though.  :X

Black bean and garlic paste:

Tastes great with eggplant and tofu:

Ok foo yu is called fermented bean curd.  Has a very strong flavor and is not for everyone but I seriously love it.

http://en.wikipedia.org/wiki/Fermented_bean_curd

Haam yu is shrimp paste - also not for everybody but it really is delicious once you've acquired the taste:

Tastes great with this vegetable I don't know the English name of:

Thanks, CG, you're a sweetheart. Salt isn't bad, I just want to lower my sodium intake. I've lowered it a lot over the past week and I'm feeling better already. I got some frozen packaged Talapia the other day and it was like...800mg of sodium. Of course it also came with this crazy sauce, so..

But anyways, I can't (or rather, shouldn't, for my health) exceed 1500 mg of sodium.

This is annoying because I get paranoid. You never know what they put in food at restaraunts and packaged food is full of sodium.

I guess this means I should just start going with natural ingredients and buying my own meats more often.

Sometimes you can just omit the salt and it works well - like with the caprese I used sea salt, pepper and olive oil but it would taste fine even without the salt.  A little balsamic vinegar goes a long way too.

Sea salt is the shit, I never use anything else. Regular bleached salt actually leaches minerals OUT of your body, whereas unprocessed sea salt puts them IN. And it tastes better too.
