 What's a good sea salt brand? I've had morton's my entire life. My whole family, including extended family, use it. But I have a feeling it's not the best sea salt to use.

Sea salt is good for certain applications but Morton still has use.  I still go back to it when I make soups or scrambled eggs...etc where table salt dissolves much more quickly and easily.  It just depends on what you're making.  :P

I actually have a rather large box (around the size of a regular box of sugar) of Kosher Salt. I like the texture it gives to certain dishes when it isn't integrated deeply. Its also great for steaks. I cover both sides of the steak almost completely with salt, let it sit for 10 minutes or so, depending on the cut and rinse the salt. Then add pepper but no salt, the steaks have already pulled in the salt internally. You need coarse salt for this (Kosher or Sea Salt).

But it is a finishing salt.  Used to season stuff after it's cooked.  I use regular Diamond Crystal kosher salt for everything else.  It's good enough for 4 star restaurants and it's cheap.  Get the big cardboard boxed version not the crappy tins.

I was cooking tonight and I wondering what a good way to season vegetables (broccoli, mixed vegetables, stuff like that) without using salt was. I cooked them steamed. Nothing fancy. Just your basic steamed veggies and I I didn't know any good ways to season without salt aside from using natural stuff like onions and lemon. Suffice to say, the food came out average.

I seasoned my Talapia with lemon too, and that came out meh. Sigh.

Buy some garlic dude. Saute some cloves and put them in the pan with the veggies after they're finished cooking/oven turned off. You never want to overcook garlic so it's a good idea to just let the heat of the pan do the trick.

You can buy various seasonings that don't use salt btw

they sauteed the mushrooms first and you could taste the garlic and olive oil on the pizza and FUCK.  it was so damn good.

Homemade fried risotto balls with a marinara sauce.
Fresh green beans marinated in a honey mustard vinaigrette with garlic and shallots.
Tomatoes from the garden in extra virgin and balsamic with garlic and onions.

Had crepes today!  :9  I had the "crepe fredo" which is: "Blue Point Crab, Spinach, White Cheddar Cheese, Swiss Gruyere, Mushrooms, Onions & Herbal Seasonings topped with White Wine Alfredo Sauce."   etiolate had the jambalaya crepe which for some reason had olives which was weird but was still tasty. (I'm just going to copy and paste the crepe descriptions from their website since they're one of those places that likes to name everything on the menu.)

Caliente Sisters -Crepe filled with French triple cream brie, enlivened with the subtle heat of jalapeno jelly.

On Saturday I grilled some porkchops.  Marinated them for two hours in jalapeno pieces, lime juice, tequila, cilantro, garlic and olive oil.  Then grilled them for about 7 minutes on each side on medium heat and fuuuuuuuuuuuuuuuuuuuuuuu  so good.  I steamed some broccoli and cauliflower and it was awesome.

This weekend I went to Julian, CA and picked a ton of apples.

Last night, my GF and I said goodbye to my parents, and we made applesauce from scratch - and to go with it, perfectly grilled pork chops, garlic mashed potatoes, and sautéed spinach. A simple dinner, but it was the perfect capstone to a weekend full of culinary adventure.

Tonight, we made TEN POUNDS OF FUCKING APPLE BUTTER.







Homemade apple butter made from apples you picked yourself is just :drool

Yeah I just use default settings on my camera phone too.  Our house was made in that era so the lighting has this ugly yellowish glow to it.   :-\

Today was farmers market day so etiolate and I ordered our usual rotisserie chicken and had a lamb curry wrap:




Afterwards we walked to the Penny Ice Creamery and had "earl grey" and "verve coffee and almond toffee" ice cream:



Later in the evening we watched Ponyo and had ramen with ham (and other stuff):



Some asshole stole etiolate's chopsticks.  It sucks making/eating ramen with a fork.

That cacciatore looks amazing, is it your own recipe?

I used this as the base recipe though I made some changes.  I measure by eye but here are the approximate measurements.  :X

12 chicken thighs
1 tablespoon salt
1 teaspoon freshly ground black pepper, plus more to taste
1 cup all purpose flour, for dredging
3 tablespoons olive oil
2 large green bell pepper, chopped
1 1/2 onion, chopped
1 bulb garlic cloves, finely chopped
1 cup dry white wine
8 large tomatoes, chopped
1 cup chicken broth
1 16oz. jar drained capers
1 1/2 tablespoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves

Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.

In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side.  Transfer the chicken to a plate and set aside. Sauté onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes.  Add the bell pepper.  Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through - about 20 minutes for the thighs.  I like the chicken to fall off the bone so I simmered for about 1-1.5 hours.

Serve with rice and basil.

Had a bash at roast pork the other night. Turned out really well.

I did a dry rub with salt, pepper, garlic and (fresh thyme) for 24hrs first, pricking holes into the fat to let the flavor in. Then I slashed the fat with a stanley knife to get it nice and crispy. Gave it 10 mins in the oven on high heat to get the crackling going, then lowered it and let it roast. After 1hr, I put the potatoes, garlic and chorizo sausages in. I basted those in the pork fat repeatedly over the next hour, trying not to go mad from the incredible aromas.

Yeah, I don't normally eat potatoes anymore but had to make an exception for this! :drool

Made some red rice for the first time. I'm used to making straight up white rice (in which I just use a little bit of oil, salt and water) but this required spices and pigeon beans. Here are some shots...


*The ingredients for the rice

You should get a used DSLR (for $300) and a cheap tripod. Thats all I'm really working with.

In theory I could take awesome shots of food, but in reality I'm always dealing with people who want to eat it.

Food-blogging has become a real craze in Japan now, btw - I've bought cookbooks from people that started off that way, then hit the bestseller lists.

Tried a new wing place yesterday.  Not bad.  The spicy honey mustard did not taste like honey or mustard at all.  Cajun was surprisingly good though definitely not the best.  Spicy BBQ chicken strips were NOT spicy but the bbq sauce was very good.  Philly cheese-steak sandwich was also a surprise considering it's a wing place - still too much bread for my liking though.  Fries were under-seasoned.  Calamari rings were bland and overcooked - to top it off they ran out of tartar sauce.

Fall Cooking is my favorite.  Below is one of my go to meals.  Roast chicken with potatoes and carrots.  All in one pan.  Love my cast iron skillet.
