put some butter in a pan, throw in some tony chachere's seasoning and some lemon and fry them that way.  comes out so good. 

potato slices with onions and green bell peppers done the same way is delicious too.

Too much cardamon will numb mouths.  Other than that it's good.

I used it to make rose lassi today.  Just blended some plain yogurt, milk, rose water, cardamon, honey and ice.  It was quite good.   :)

Never worked with cardamon or rose water before so this was an interesting experience.

Cardamom-Scented Whipped Sweet Potatoes (Great Fall or Winter recipe)

6 medium sized sweet potatoes
1/2 cup unsalted butter, at room temperature
1/3-1 cup heavy cream, heated
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cardamon
Salt to taste

Preheat the oven to 325 degrees.
Put the sweet potatoes on a foil line baking sweet and bake for 90 minutes until very soft and tender.
Remove from the oven and cool slightly.
Peel the warm potatoes, and put them in a bowl of an electric mixer and beat until mashed.
Add the butter, 1/3 of the cream, cardamom, nutmeg, and 1/2 teaspoon of salt.
Whip until smooth and creamy-you may need to add more cream and adjust seasoning.

CG, Cohen is only saying that a little of cardamom goes a long way, kinda like nutmeg.

I cooked Japanese curry tonight, it was super easy and super delicious. Forgot to take pics but I might photograph leftovers later. This is what Japanese curry looks like:



Base proportions for curry are:

1 box Japanese curry roux (I use Vermont Curry Hot because of the honey and apples)
2 onions
2 potatoes
1 carrot

I usually make a half box which is 4 healthy servings.

Basically, you

- Grill whatever meat you want in it (I chose sliced beef and pork sausages)
- Add the chopped vegetables and saute until lightly browned
- Fill with 6 cups water, bring to boil until vegetables are softened (about 20 minutes)
- Add curry roux, simmer down until curry is thick (15-20 minutes)
- Put it on rice and it's SO FUCKING GOOD

Anyhow, I was taught the DARK SECRET of cooking curry at home tonight so I thought I'd pass it along. That dark secret is:

- 1 bar dark chocolate per box of curry roux

Add it at the same time as the roux. This sweetens up the curry and reduces the "boxy" bitterness of the roux without overpowering the spiciness of the curry. WOW

Curry you make at home is better than anything you can find in a restaurant in the U.S.! And it's pretty damn easy. I recommend finding some roux at a Japanese/asian grocery and giving it a try. :)

Patel - red wine in J-curry is a must, especially with beef. Do it now. Also, i mince one onion and sautee on low heat 'til brown, and roughly quarter another to add after the other veggies. One for flavour, another for texture, basically.

Today I made curry spiced lamb (dry rub - turmeric, cardamom, ground ginger, cinnamon, salt, and pepper) with a raspberry wine sauce.  Camera went wacko on me though so no pics.   :'(

We also had chrysanthemum tea:

Wish I had taken a picture but I made Roasted Red Potatoes for the first time today. Came out great. I've tried it before but out of ignorance thought 350 Degrees was good and guestemated on the time. It hadn't turned out too well.

This time I quartered the potatoes, drizzled vegetable oil over them (need to buy Olive Oil), sprinked salt and garlic and other various herbs mixture over them. I then baked them at 425 Fahrenheit for 30mins, then turned them over and allowing them to cook for another 30 mins. Came out perfect. They were accompanied be some fried pork chops and a salad.

Made and ate this just now



Taught to me by my Mother. Its plain white rice with (what I'm typing out phonetically, don't know how to spell it in Spanish) Carne Ganisada. The beef was stewed yesterday for two hours (after applying a mixture of Adobo, Sazon, Sofrito, tomato paste with cut up pepper, onion and potatoes), then allowed to sit in the fridge over night, then reheated when cooking the rice. Very flavorful and the beef falls apart when eating.

Tried my hand at bread making today.  Turned out well though I really only made basic white bread and cinnamon rolls.  Great experience though - will definitely be exploring more!

This is the easy, no-stress way to do lasagne: just pile it up in the middle of the baking tray in whatever portion you're going to eat that day. Don't worry about building a gazillion equal layers. I only used 5 sheets here.

That Lasagna looks f'n delicious

Right now I'm trying out a Low/High method of cooking a steak. Use my ovens broiler and place the steaks directly on the rack near the bottom over a pan to catch the dripping. After ten minutes (flipping half way), I then raise the rack directly up to the heating element and let the outside sear up (2 minutes each side).

Pork tenderloin stew with Estragon(taragon) for nine persons, has become the christmas day dish of choice for my family:

Ingredients are a bottle of dry white wine,
roughly 1,6 kilograms of pork tenderloin (4lbs),
four packs of hollandaise sauce,
one pound of mushrooms,
Taragon, Taragon and Taragon! :lol

Side dish were potato croquettes.

Slice the tenderloin and fry them in batches, spice them with salt, pepper and taragon when in the pan. Set the fried batches aside:




While the meat is going, thinly slice the mushrooms. If applicable,  delegate the mushroom chores to a nearby family member:

When all meat is done, the pan should have a nice crust on the bottom. Cook it loose with the wine and let it boil:


Essence of taste!

When the sauce base is boiling again, add the hollandaise and the pork. Let it simmer and reduce to roughly 1/2 to 2/3 of the original amount. Liberally add taragon, salt and pepper to the mix:



This should take around 30 to 45 minutes, depending on the amount of stew. About 20 minutes before serving, get the croquettes started. The pot should look like this by now:


Immmediately before serving, add the mushrooms so the'll conserve their fresh and raw taste:



DONE!
Serve with the croquettes and enjoy:


Dessert was a christmas-themed ice cream:

mmm, pork. I have an interesting recipe for a pork and beer stew that I might try this weekend. Being married to a vegetarian really cramps my style, unfortunately.

I made cheesecake the other day, and served it with a homemade sauce made from peach preserves and orange liquer.

Sorry, no pics, but I just finished up some lamb tangine.  I love stews in the winter.  I'm really digging Morrocan cooking these days, and I had to go to Kalustyan's, an amazing ethnic food market in NYC that has every kind of spice imaginable, to prepare the tangine.  They are also at their peak freshness, unlike stale supermarket spices.

Here's recipe that I've gotten good results with for all of FoodBore.


Ingredients:
3 pounds cream cheese, room temperature

1 1/2 cups sugar (12 ounces)

pinch salt

1 teaspoon vanilla extract or the seeds of 1 fresh vanilla bean

3 large eggs

1 cup sour cream or heavy (whipping) cream

graham cracker crumbs and butter for crust

Directions:
In the bowl of a mixer, place the cream cheese, sugar, salt, and vanilla bean seeds, if using (if using vanilla extract, add after creaming).

Cream the mixture at medium speed, until light, then add the vanilla extract (if using), and the eggs, one at a time, mixing for 2 minutes after each addition. Stir in sour cream or heavy cream until well combined.

Butter a springform pan (10-inch diameter with 2 1/2-inch sides) and sprinkle with graham cracker crumbs. Pour batter into the pan and bake in a preheated oven about 70 minutes, or until the cake tests done in the center.

Remove to cake rack, and cool completely. Then remove cake from springform pan and refrigerate. Serve chilled plain, or with your favorite fruit or fruit compote.
