My education resume is the only plus I have. I doubt it means much at a fast food joint, although maybe a manager who deals with fucktards all day could take a chance of someone with degrees

Depends on the person.  Having interviewed a lot of people with degrees in recent months, I'm more inclined to give a job to someone with good communication skills, salesmanship and/or experience than someone with no social skills and a four-year degree.  Especially uninterested ones.

That's where I'm trying to make my mark. Even when the economy is good employers hesitate to hire people with little experience because they don't want to waste time/money training them. If you can offer something to the company beyond experience - like good communication skills and a willingness to work hard - you can get in the door. I'm naturally shy but I have good communication skills and oddly enough I come off charismatic and persuasive when I want to. I'd much rather put those skills to work at a Gamestop or Best Buy, but I'll take them to the fast food slaughter house first if I must.

I mostly make my call based on verbal skills and insight shown in the interview. I look at resumes for warning flags.

PD, the trick is to keep going at it. Show them you won't sit still and that you really want that job.
