Impossible to say, but here are some of my favorites:

Teenage Riot - on Daydream Nation by Sonic Youth
Summer Babe - on Slanted and Enchanted by Pavement
Djed - on Millions Now Living Will Never Die by Tortoise
Milkman - on Milkman by Deerhoof
Acknowledgment - on A Love Supreme by Coltrane
Right Off - on A Tribute to Jack Johnson by Miles Davis (kinda unfair since it's a two song album)
Woody Woodpecker - on Spiderman of the Rings by Dan Deacon
Everything in its Right Place - on Kid A by Radiohead

You'll be surprised to learn that I agree with you. They've had some pretty good opening songs--"I Saw Her Standing there," "Help," "A Hard Day's Night," "Come Together," and "Taxman"--but nothing that would be considered the best opening ever.

Breathe - on DSOTM by Pink Floyd.   so classic.  I wish I hadn't over-listened to that album while stoned in high school.

Say what you want to about Plans, but the opener for the album sets the tone for the rest of it.

Marching Bands of Manhattan - Death Cab for Cutie.

I would probably come up with better selections if I wasn't sleep-deprived at the moment.

There are a ton of good choices here, but I've never heard an album's first tune that topped this:
