There were two specific story arcs where Kevin really stepped it up:

1. Scrantonicity II
2. When Holly thinks he's "slow"

Still, Stanley and Creed >>> all

The first six episodes don't really even count.  The show didn't get into the swing of things until sometime early in Season 2.  Season 1 was a six-episode experiment where they mined the same territory that the British show already covered.  They started doing their own thing in Season 2.

Creed only has about 15-20 minutes of dialogue in the whole series, but every single bit of it is priceless.

Dwight is the best character on the show imho. Can't beat the last scene in Deposition when he and Mose are having a ferocious ping pong battle on the beet farm.

He's kind of a one-trick pony, but the line about chopping off Andy's hands with a sword last week had me rolling.

I tried watching the British version thanks to the magic of Netflix. While amusing in its own right, it's terrible when compared to the U.S. version.

It's brilliant, entirely different but more focused at what it does.
The UK version is showing the insanity of daily life through a documentary, the US version is a sitcom with a wacky boss.
