For some reason, the style looks like a cross between the Burton Batmans and Bioshock.

Have they actually explained how the game is played yet?

Watch the video.  It's pretty much like Tenchu or Splinter Cell with Batman and all the gadgets and skills that come with him.  The game looks awesome.

And the style isn't the best, but I don't hate it like some people seem to.  Someone on gaf said it back when it was first shown and it's probably the best way to sum it up; it's pretty much every popular look of the characters combined together.  Batman himself is like a mix of Jim Lee, Alex Ross and Nolan film Batman.  The most obvious one is Croc with the body style of how Jim Lee drew him with the facial features of classic/TAS Croc.

I know the general mechanics but I don't get how the open-world missions structure works.

Looks good graphically, even though I think Batman is a bit too muscular and that green ogre looks way too much like a Fallout 3 Super Mutant.

Eh, it's not as bad as Tim Sale Batman, who is almost as bad as that one Captain America treetrunk pelvis

I just saw the GDC challenge room walkthrough and I'm thoroughly impressed. The game looks phenomenal and the stealth mechanics that was displayed in the video were awesome. Let's hope they keep this level of quality for as long as they could in the final game.

I just saw it too and it's the first gameplay I've seen.  It looked decidedly awesome - I love that style of gameplay.

the demo was cool.  Those gargoyle statues were really out of place though  :lol
