a.k.a. a pescatarian.  it's pretty easy here in Portland, which is important for moral distinguished mentally-challenged fellows like me who only bother with principles when it's convenient

My main issue with becoming a true vegetarian is that vegetarian dishes that you can get at restaurants and such tend to feature tofu, and tofu for me is equally likely to be sublime or disgusting depending on how it's prepared but unfortunately there's no way for me to know in advance which a given dish will be without trying it.

Also, any and all "fake meat" style vegetarian dishes I've tried have been gag-worthy.

My wife has pracitcally made us pescatarian.  We never have red meat at home...and chicken only on occasion.  We eat fish more than both combined....something which, suprisingly, I have no problem with.  The only thing I don't love about fish is the price...of course in a landlocked state the price is going to be higher than in others. 

When I was in Portland last month we had a damn fine vegetarian pizza at a place (forgot the name) just over the Burnside bridge in downtown.  Really good stuff.

all dead on the inside except for the compassion area of the brain

to actually choose not to ever never forever eat the following foods is unthinkable unfathomable masochistic crazy carazy pretentious to a point ok im done:

-americanized chinese food

-china buffets (which count twice because its fucking awesome)

-the occasional steak

-mexican food (veggie fuck fests wrapped in a roll dont count)

-deli meat sandwiches

-bacon wrapped shrimp (still counts for recursivelynumbers)

-milk in cereal (un ameican if you ask me, which you didnt, terrorist (also: manboobs/moobs/sugartits/bitchtits))

-cant think of anything else but im sure theres more

at least youll can still have fried seafood, which ranks up there with chinese imnsho

two hot dogs
a huge serving of antipasto packed with chunks of cheese and salami
a barbecue platter with a piece of fried chicken on the side

F' that. The fat in whole milk shouldn't impact your diet that badly. I'm sure purely eating greens and fish will make up for any metabolic concerns.

if you wanna do it for real make sure you have a wide variety of meals lined up, including simple stuff to throw together or snack on. also you'll prolly wanna grab some of the stuff that imitates your favorite meat foods because you'll start getting some cravings.

I’ve known a few people who have done this, including my sister. Seems surprisingly easy compared to straight up vegetarianism. She eventually went back to eating meat but she says she could drop it again easily.

If I could do it, I would. Seems like the morally correct thing to do. I rely on fast food too much and actually don’t cook for myself too often.

I've gone mostly vegetarian during the lockdown. I signed up for Imperfect Produce and that combined with whatever rice and beans I have has been pretty sufficient. I still eat meat when I get nachos from the burrito place across the street, but I haven't purchased any meat to cook in 2 months.
