I enjoy cooking my own burgers, but it's cool the article mentions the All American Drive-In, that's pretty close to where I work and I was planning a trip out there one week during lunch. Unfortunately, it's only outside eating, and right now the weather in NY has been shitty.

And here I will repeat, a Kobe burger is always, always a bad idea. When cooked rare to medium-rare, as most chefs who put these on their menus usually recommend, the texture inevitably renders as mushy. It's like moist cat food on a bun, with the meat oozing out the sides and back as you try to eat the burger. Why turn a glorious piece of beef into minced meat?

And they included steamed burgers.

Quote
Prevalent in a small part of Connecticut, the steamed cheeseburger is prepared in a microwave-size steaming chamber that holds several small trays.

Damn good food writing.  It's rare to see that these days.

pro tip for grilling burgers, learned it years ago:

when you are making the burger patties, add a tablespoon of apple sauce for every pound of meat

you won't taste it when it's cooked, and it keeps the burgers nice and juicy inside

My moma makes her patties with french-onion soup mix and (maybe) a bit of crushed crackers (more crackers are used for glorious meatballs).

Also, to keep it flat, make a thumb indentation in the center of the burger on one side.

I do something similar with added juiciness, since I tend to use very lean meats, even when cooking my own burgers (which is not recommended, but high fat meals send me for a tizzy).

I basically make my own burgers almost exclusively now since the toppings I like aren't at all common and I really don't white bread anymore, even on hamburger buns. No flavor, empty carbs = icky.

I'll take corny's burger over that in-and-out monster. His actually looks like something that is at least a remotely properly-proportioned menu item, while the in-and-out burger looks like it should kill someone dead after consumption.

I never do get why american restuarants keep offering bigger and bigger portions.can't we make the portions smaller and use better nutrition to make them just as filling and tasty?

An In-N-Out burger isn't really THAT big - to be honest, the burger I posted is bigger than an In-N-Out burger. Like, twice the size of one.

I like In-N-Out just fine, and I can understand why non-Californians lose their shit over 'em. I'd still rather take a trip to LA for one of those Fathers' Office burgers and a nice Pliny the Elder to wash it down.

Is the texture of the burger a little grittier because of the applesauce?

More like old and not interested in eating something stupid oversized. Also, a huge burger fan that wishes someone would take a different direction than "bigger is better". Even in my foodie-crazed town, I can count the number of burger places that break from the norm on two fingers.

Yikes! Guess it is in the camera angles-your burger shot doesn't look that big.

It shouldn't matter-unsweeted applesauce barely has any real texture of its own when combined with something like ground meat since the peel is removed.
