Dropbox--access important files and documents (Videos, PDFs, etc) from the cloud.  Service is free up to 2 gigs.  Great for PCs as well.

Air Video-Stream video from your PC to your iPad.  Great for bedtime or couch watching, while you're playing games.  LOL.

Netflix--Netflix instant Q access on your iPad.

Instapaper--You need to add the bookmarklet to your browser, but it allows to read longer form articles at a later time and accessible by another device, like a smartphone or iPad.  It strips the ads and formatting, so you only get the essential text.  Great product if you like doing a lot of long form reading from online sources.

Flipboard--A sort of RSS aggregator that present your feeds in a very tablet friendly manner.  You can also add Facebook and Twitter feeds.  Great IU design

The Apple apps are also great--Keynote for presentations, the new Garageband and iMovie--if you have the iPad 2--and Facetime.

Kindle app if she's an avid reader.

Games: Infinity Blade, World of Goo, Cave Shooters, Angry Birds , Rage HD.

I can help you with JB apps, even though I'm not entirely sure if the stuff I'm using is compatible with the iPad. Just point out a particular OS nuisance and I'll let you know if they have a workaround for it.

Is there a JB app that gives me a photo viewer that recognizes my folders from my PC?

For example, this is one folder:

WEDDING (no pictures)
    Roy (no pictures)
          Rehearsal dinner (pictures)
          Ceremony (pictures)
          Reception (pictures)
    Kelly (pictures)

When I sync the WEDDING directory in iTunes, the iPad displays Roy, Kelly, Robert, etc. Then there are hundreds and hundreds of pictures in each, stripped of the folder separation that I had on my PC.

When I want to sync non-wedding folders it will be even worse, as the Wedding directory wasn't even retained so I will have Auto Show 2008 parked right next to Kelly.

I have (some of my) my photos synced via itunes. It's dream cause I use iPhoto to manage my photos. Each photo is properly face-tagged and stuck into places, events and albums

Yeah, there isn't a way that I know of. The only decent photo management app on Cydia is called Photoalbums+ but it only allows you to create albums on you iPad without resorting to iTunes then move your photos from Camera Roll (or the iPad equivalent) to that newly created album. So I don't think it would remedy your situation.

The way iTunes handle photos is absolutely distinguished mentally-challenged, period. You best bet is to designate your Syncable folder then only move folders that contain the photos, no subfolders (so: Rehearsal dinner, Ceremony, Reception, Kelly) because if you do include subfolders, well you found that out yourself; all photos will be grouped into the highest folder inside the syncable folder's root.

... and this is one of the moments when we pee on Apple without anyone objecting.

The only I-OS app that matters is NanoStudio, and there's not yet a dedicated I-Pad version.

Because it only allows you to create the albums on the fly (ie: on the iPad not your PC). It'll give you direct access to photos and the albums you've created on the iPad through USB, but if you you try moving folders from your PC directly to the DCIM folder (where the photos are stored) the iPad won't recognize them as albums/folders and will group everything in your camera roll.

bumping this 'cause I finally got around to setting up VLC Remote. And it is AWESOME.

I have my PC connected directly to a TV by HDMI, and use a wireless mouse for watching stuff with VLC most of the time. It's fine, pretty easy to do. But it is nowhere near as cool or nice to use as a full remote control app on the iPad (and also on the iPhone). You don't have to do any of that waving the mouse around to find the pointer or looking for tiny buttons or text on the tv. There are free versions of both (separate for iPad and iPhone). It was a piece of cake to set up too - you DL a 'set up' app, but you only have to run it once. Once you try it, you'll never go back.

If you've used the official Apple Remote app, you'll appreciate how fun this is. But who has all their content in iTunes? :yuck

I have the logitech mouse app but I haven't used it yet.

I have various things like that - remote desktop apps, the Apple Remote app, a wifi mouse app...but the remote desktop stuff is really sluggish, and the remote stuff still entails squinting at small icons and text on the TV, x meters away from you. Being able to control it all smoothly on a big screen that's right there is just so nice in comparison.
