The Show is the best sim baseball game by a huge lead. Problem is it's a Sony only game.
The Bigs is a mix between sim and arcade. It has power ups and zanier quirks from arcade games but it's all grounded in realistic enough Baseball that requires skill. Sort of like Baseball Stars 2.
For pure arcade, baseball for children games there are those power pro games. I have the one for Wii and I think there's a PS3 version. It's straight up RBI Baseball from the NES.
Um, there was a Mario Baseball on gamecube that wasn't great (mario soccer was great, though...random thought). There're 2K Baseball games for all system, seem sim like, but I have no personal experience with them.
