I'm making fried chicken with some thighs I have. And I know The Bore knows Yum Brands, so when they aren't biblically knowing Taco Bell they might know and best the Colonel. So I ask... (RACIST!)

Do you prefer it more uniform, straight flour:



Or with more of those nubbins:



Marinate in buttermilk? Or a brine? Both?

What's the spices? Eleven herbs and spices, or more?

Deep fry? Or shallow fry and finish in the oven?

How does The Bore do fried chicken?

Related, I watched this show last year with a "food hacker" called Top Secret Recipes and the guy was trying to figure out the KFC recipe. I figured I'd try some of it, and found out that a bit of ginger is a pretty clutch ingredient.

Will have to check out that Bon Chon chicken, I've incorporated some "Asian" aspects to my "boring" cooking over the years. Panko is almost mainstream now, but it's a nice coating on standard fried chicken anyway.

And something fried in delicious delicious fat is probably a lot safer than raw fish.

Here's more or less what I do, though I tinker like hell.

I often get Leg Quarters because they're like 79 cents a pound, or Amish Drumstick/Thighs and you don't really have to put too much effort into them.

For thighs, I usually do a buttermilk brine that also has garlic, paprika, ginger, pepper and depending on things other stuff in it. And I give it overnight.

Then I'll toss in some flour seasoned with similar spices. Savory, white pepper, red pepper flakes, majoram, etc. can be added, just whatever I feel like more than anything. I might add sugar, corn starch, baking powder, cracker meal, etc. for texturing or flavor.

Usually I do shallow fry in maybe half an inch if that of canola oil, about three minutes per side, then onto a rack over a foiled pan. (for cleanup) Then in 400 degree oven for a bit to make sure it's cooked and to crisp up the skin more.

For breasts, I tend not to brine, instead I motorboat, but in reality it's because after I cut them up it makes things kinda tough from my experience. I tend to just cut them up into tenders and toss in the seasoned flour, and don't do the baking since they cook through.

I'll have to give that a shot.  I've only tried a few times but I always fried the whole way through and used a basic flour and spice mix.  But the flour mix never seemed to "grab on" during the fry if you know what I mean.  when it was done it would just kinda slide off.  Not very good.

As far as fast food fried chicken goes, Popeye's is by far my favorite. Unfortunately the only place around here that has a Popeye's is in Hempstead... and you don't go to Hempstead if you can help it (especially if you're white)... There's a great soul food place over near Roosevelt Field that has some good fried chicken (but I prefer their ribs), its owned by Eddie Murphy's former chef.

If you don't use eggs or something to bind (I usually don't because it's work) just stick the pieces in a zip-top bag and toss it in that and when it looks coated, let it sit for a few minutes and it should adhere.

I still get stuff falling off but the pieces are nicely coated. Sometimes it's worth it to do a fully flour+spice coat, then you see it's not fully covered you dump in some more flour to cover, which makes that second coat.

The shallow fry method is basically to cook the outside and make it stick, and then you use the oven to cook the chicken itself, that way you aren't burning the coating.

Random note for anyone: I like unbleached all purpose flour, some people can taste the bleaching agent and I'm one of those, if it comes out with a funny aftertaste you're possibly tasting that. Many people don't notice it though.

Popeyes is my favorite, but it seriously is hit or miss. And what the hell is up with their biscuits? That thing has no resemblance to a real biscuit. It looks like a combination of a hockey puck and sponge. Al must have taken the recipe with him after he lost Popeyes, because they are far superior at Copeland's.

I made some homemade fried chicken the other week. It was my first time but I can give you some tips.

- apparently marinating the chicken in buttermilk is amazing. My roommate told me thats the way to go, but I didn't use it. Was in a hurry.

- don't go too crazy with the herbs and spices! Basically I went nuts with the seasoning, and Fennel Seed doesnt really work with chicken. Keep it basic and stick to flavours that you know.

- make sure the oil is hot enough! Use a thermometer if you have one. The oil wasnt hot enough for my first batch of chicken and the coating came out rubbery as opposed to crispy

He has a number of books with all sorts of things, I think somebody mentioned one of them in a thread here. Don't remember who it was unfortunately.

At least for the KFC, to me it was that ginger that added that unspoken flavor where you can't really figure out what it is until it's there. I like ginger a lot though, so might be that.
I use stuff called Willinghams, honestly, it's the best thing to use when doing fried-chicken.
Rub or spices? Can't seem to get it to load in Chrome.

I've kinda gone for more direct spices and concoct my own because I can control amounts, like Sceneman notes. I do kinda like the garlic herb zesty blend Kroger has though as a backing.

Tried some Lawry's Seasoning Salt at one point, which are great on fries (another thread perhaps?) but didn't work for chicken.

It's blasphemy, but some easier "options" were mentioned and I kinda like the frozen Banquet drumsticks. When they're on sale I don't mind getting them to stash in the fridge in case I want something easy.

Which isn't a huge leap of easy since I have "real" drumsticks usually, but sometimes you just want to stick some crap in the oven fire up the Wii and drink yourself to a "New Record!"
