Bourbon appreciation thread of bourbon, because bourbon

Drinking this tonight, papangus:

Bulleit is pretty good stuff; I genuinely prefer it more than Woodford for the "mid-level" bourbons.  Anybody ever had Pappy van Winkle?

The best I've ever had is from New York State, surprisingly.

The price reflects the quality, unfortunately, at almost double the price of most others.

Blanton's is good, as is Maker's 46. Woodford and Knob Creek are the best value for quality, though.

It's cool. I only buy it when I'm in the U.S. because here it's even more expensive.

As for rum, I'm surprised how good Bacardi 8 is, but for Dark and Stormies, nothing beats The Kraken.

Only alcohol I can't stand is vodka.

I went to a whisky show a few weeks ago, infinite samples (1/4 oz) for $80. Bourbon was massively under represented, they only had one booth and it was all stuff I had tasted or bought before. Got me a little more interested in scotch, though.

Scotch definitely has a richer history, but I just find it so strange how times have changed. In the 30s, single malts were considered cheap as hell and disgusting. Everyone wanted a good blend. Now, if it's a blend, it's crap. The weird part is that even "single malts" are blended from multiple barrels and multiple years and multiple harvests of barley, so

Blanton's and Maker's Mark are good but most of the time I would rather drink a non-bourbon whiskey.

Whisky is fun to make, at least, but it's hard shit. Same with all-grain beer. The fun part is in marrying the science of amylase conversion with the art of separating a distill. If there were better subsidies here, I'd love to start up a distillery.

Jack is crazy expensive in some countries.  It's well known, sells at a premium, and the duty on American alcohol can be as high as 200% of wholesale, especially in some Latin American countries.

Pappy van winkle is like the jordans of whisky. The resale back and forthery is nuts.

there was a huge theft of it too from the distillery a few months back. dude stole something like 70 cases of it.

Speaking of which, drank Northern Lights "Canadian" last night. Gotta eat something greasy to deal with this, ugh.

My favorites in order (that I have tried):

Blanton's > Maker's 46 > Eagle Rare > Woodford > Maker's Mark > Bulleit > Jim Beam > Old Heaven Hill

Honorable Mention: Red Stag (Jim Beam with cherry syrup).  Stuff is great for parties.  Just carry the jug with you.

Maker's Mark is my go-to for general drinking and mixing.  I love that stuff so much that I've toured the distillery and became and Ambassador.

Fireball is sugary. It's good for mixing with a coke. Not as sugary as say the cheap variation of Four Roses or frickin SoCo.

Also, I've tried those Moonshines out there. Sweet, but not so bad. The Apple Pie Moonshine is nice.

We used to take Fireball camping, not so much because of anything it did for us but because we would kill the bottles the first night and leave them out with the caps off all around the campsite for the rest of the time.

By the end, we had probably collected about 45 dead wasps.

I'm not sure what qualifies as "moonshine" but depending on the source, raw white dog whisky is disgusting. Corn-heavy and rye-heavy mashes in particular have a distinct taste of fermentation that aging gets rid of. Weirdest mass-market trend to pop up in stores recently in my opinion.

The "moonshine" I've seen in stores is not real Moonshine. That shit is a disgrace. Real Moonshine comes in mason jars with no label.

And Etoilet, the Apple Pie I had over the summer, GOTDAMN. Drank 3 and a half quarts at Terrapin this year. FUKKEN TANKED. Lucky to have found my campsite.

You should be good with those two for a while. If you haven't discovered yet, a Glencairn whisky glass is invaluable for drinking neat. Makers 46 also makes a hell of a bourbon Manhattan, though Hudson's Rye makes the best classic ($$$$$$$$$$$).

You want long last super cold ice balls I'm your man. These balls will be so cold they won't dilute your booze a bit. This is a bit of science and can be dangerous, but its super cool!

First get one of these
http://www.amazon.com/Tovolo-Sphere-Ice-Molds-Set/dp/B007ACTN54/ref=sr_1_1?ie=UTF8&qid=1386362880&sr=8-1&keywords=spherical+ice+cube+tray

Setup the balls and freeze them normally. once done put them in a rubber balloon (wash out the inside first) and move on to the next step. In a bucket mix 3 liters 92% rubbing alcohol and slowly drop in 1lb of dry ice. slowly with a wooden spoon mix the mixture till it starts to boils. Drop in the sealed balloons with the iceballs and wait a few minutes (3-5). Wash off the outside and free you're super cool ice balls. Place in drink and enjoy!

I've been enjoying some Cask 16 that I found. That shit got super hard to find, but its canadian and cheap mid tier stuff.

That seems like a lot of effort.

I'm not a huge fan of super fancy bourbons...generally stick to midrange...bulleit, buffalo trace, gentleman/jack, makers...whatever is on sale.

I love a good old fashioned though. I have been getting away from muddled fruit/simple syrup and more into something...weirder. bourbon > traditional (angostura) bitters > REGAN's orange bitters > rock candy stick > large lemon zest...like half a side shaved. it is great. although I keep running out of rock candy and lemons so it's more of a special occasion/want thing.  :'(

This thread reminds me I want and may actually order a fancy ice mold. Spherical, King cube or both lol...have had both, wanted to look around in the past but never got around to it.

i'm not much of a bourbon dude, so this may be a dumb question: are there substantial differences in the flavors of various bourbons? would one favor being put in eggnog (ie, dairy, egg, and nutmeg)? or should I just get something that isn't shit but isn't the top-tier?

I dont use whiskey in marinades often. if i ever use alcohol, it's small amounts of something like triple sec to add citrus notes to marinades or something. Bourbon can be excellent if you need a slightly sweeter, vanilla element in anything though. That's why I prefer it in deglazing and compotes or whatever.

Get four roses (not the single barrel or good ones) for that.

I used it in a rib's marinade and it was pretty good but I think a sweet rum would probably be better.

Maker's Mark is my go-to for cooking and mixing.  It's good.  It's not too expensive.

I've never made a marinade from a bourbon or whiskey.  I have made some rather tasty glazes for pork chops and chicken using brown sugar, Maker's mark, and nutmeg.

I'd think bourbon, honey, a bit of worcestershire and cloves would be a good marinade.
Someone else might correct me on this, but I'd say no, there aren't. Since bourbon is by law mostly corn mash they all taste similar, and not vaguely. I think the general rule with imbibing alcohol of any sort is go with the best you can afford. Sure, someone might say using top shelf to make eggnog is a waste, but how? Just because you're mixing it with cream, egg, and sugar you should suffer low quality alcohol? That line of thinking doesn't make sense to me. It's like cooking with wine: use a bottle you would drink, not cheap cooking wine.

That said, for a mid-tier bourbon with no added impurities I recommend Bulleit bourbon.
yeah, I usually go with bulleit for general use, I was just wondering if there were material differences aside from general quality. I wasn't planning on dumping $200 of evan williams in there necessarily...

using it in a marinade? buy what you can afford but don't use the real good stuff (unless that is the only stuff you have around).

Ehhhhh, kind of. "Mostly corn mash" just means 51% corn mash, but the remaining 49% makes a lot of difference. That said, it's similar to scotch in a way, since single-malts will be 100% barley, but the difference in taste comes from the strain of barley, the degree of malting, whether it's roasted and to what stage, whether it's smoked and by what, what temperature it's mashed at and for how long, the yeast used to ferment it, the type and material of still, how many distillations it goes through, the cuts made to heads and tails during final distillation, the grade of "toast" on the inside of the barrel, and how long it's aged. A lot can change based on temperature and humidity as well while aging is taking place.

There's a lot that goes into it, and it means that every "recipe" won't yield the same stuff, which is why before bottling several barrels are blended together to make a uniform taste.

I underwent a similar process with craft beers- started out going the hoppier the better, and now I'm to the point where I generally just enjoy non-pale ales and porters. Reading the description helps- if you see lots of buzzwords revolving around HOW FUCKIN' HOPPY THIS ALE IS, BRO then you can safely skip it.  This sort of description is of a local craft brewed pale ale that I quite enjoy:

Quote
This 5.5% abv dry hopped pale ale has a slightly cloudy orange color and a pleasant citrus aroma that is backed with a touch of pine. Wheat malt gives this balanced beer a silky mouthfeel.

It doesn't overwhelm and is nice if you're in the mood for a pale ale.

By contrast, from the same brewery, this is the sort of shit I avoid these days:

Quote
The Freak of Nature is our San Francisco inspired hoppy monster. At 8% abv and who knows how many ibu’s, this beer is our shrine to the Hop. Absurd amounts of the big West Coast hops gives this beer its citrusy, weedy nose and big, dank flavor. We dry hop with 48lbs per batch, which is over 3lbs of hops per barrel. I keeping with the classic style of the West Coast double, sugar plays a large part in creating this dry and minimally bitter double IPA. The Freak is particularly pintable for the style, so if you dare to enter, we welcome you to the Freak Show.

Thanks but no thanks.

I really can't do the hop overload ales at all. Craft brewers have no restraint with that shit. More isnt better, especially with the bitterness. :holeup

Please seek this out

http://beeradvocate.com/beer/profile/64/18862

It's a rare case where more is better. Take a double IPA and then age it.... OMG  its so good. The aging mellows out the bitterness and makes it super smooth.

Grassy is the best way to describe rye in general. Knob Creek is evidently the favourite of Vince Gilligan of Breaking Bad fame. I bottled 9 100mL samples of my own stuff for Christmas gifts today.
