plus even if you don't like it you have to acknowledge they're originators.

I voted

-memphis. best ribs and pork handling, especially dry rubs. thin Vinegary sauce is ideal; they let the meat + smoke speak for itself instead of covering it with sugar which is the main weakness of...

-kansas city which i voted for cause they have all around good shit (they barbecue everything man) and burnt ends which are gawd tier, but can definitely be pretty sauce dependent.

-st louis, pork steaks are one of my favorite things to barbecue and i gotta hold it down for the hometown.

I forgot about Carolina dry rub, that shit is legit.

As for sauces....I need me some molasses in my sauce. Don't come at me with that ketchup based Ohio crap I have to tolerate now.

If I don't come out of the BBQ joint looking like I was in the Texas Chainsaw Massacre then your shit is not legit and you should feel bad.

you think that way but when you live in one for an extended period of time you can easily get sick of it. i'm from a fairly respectable bbq city in st. louis and spent a few years in memphis, and to be honest at the end of my memphis tenure i was looking at any bbq like (Image removed from quote.)

I already said burnt ends are good, bruh. They're a bbq delicacy. But they're also very much bbq 'candy' in a sense, being the fattiest part of the rib crisped up and slopped on some sauce. They're like the bacon of barbecue.

Looks good. A lot of people would say all those pickled veggies is some bourgeois / hipster barbecue and they might have a point (your standard southern joint might give you some pickled cucumber slices and coleslaw) but I think of it as a very southern thing.

I'm not saying bbq in the north is all automatically bad, especially because you know, people move and shit, but I tend to give it the :heh because northerners are the type of people to say only pizza from NYC is real pizza.

Put pickled anything next to my BBQ and get punched in the mouf brehs. I once ordered a McRib, once, and it had pickles on it. I about puked that shit up.
