Maybe in a big city, sure, but at $3 a pop in a smaller city you might as well go ahead and write "going out of business" on the back of your grand opening sign. There's never going to be enough people to sell to on a daily basis to cover your overhead.

They were the 'artisanal' fad du jour a while back, sure, but now there's whole kiosks in mall food courts dedicated to cupcakes. When did America's demand for cupcakes get high enough to justify this? all these specialty versions of confections have kind of a hard ceiling on how good they can be.   A donut can only be so good, a cupcake can only be so good, cookie can only be so good, etc.  there's more complexity in the ways you can fuck them up than in what you can do to make them better or "gourmet."
