What are your favorite cuisines, boys?

I like red sauce Italian myself (you know? the type you see in mobster films).  I remember when I went to Italy and there was no goopy red sauce to be found. WTF?! Then I became more cultured and learned yeah, there was more to it!

I also like Indian and Japanese. 

But meatballs with Sunday gravy over spaghetti is hard to beat!

Scandinavian cuisine (I've only been to Denmark and Sweden though) was among the best surprises when I went to Copenhagen and Stockholm. There were some amazing restaurants specializing on modern versions of traditional food.

There is great stuff in every cuisine.

Though I found every Indian (mostly Kashmir and South Indian IIRC) restaurant I ever been to slightly disappointing.  :-\

Greek cuisine is criminally underrated, it has so much more to offer than gyros and souvlaki.

Vietnamese cuisine has been on the rise over here over the last 5 or so years.I like it, it is much lighter than Chinese food (at least the European version of it), but I think it's pretty overrated. :hmph

I'm a good cook but i'm not good at making indian food yet because i refuse to do it without a house with proper vent and i live in an apartment :mjcry

The cooking process for some dishes is absolutely pungent, I remember me and other 2nd gen cousins would complain to our parents about the smell of cooking for some dishes. TURN THE FAN ON MOM.
Cooked dish not nearly as smelly and is tasty.

On a side note, smelly stereotype probably arose from noseblind people cooking up said dishes and wearing what they wore during it out and about. Some of the smells really just stick to stuff like crazy.
I'd be perplexed by the stereotype since no one I knew had such "issues" but I later clued in that is was probably a combination of wearing your eau de'spice rack and not using deodorant. I got a whiff once of a brown guy once in a classroom and I was like "man, that's a strong scent of tadka, poor white noses".

Another issue with apartment food and Indian cooking is storage. Actual good Indian food requires storing whole spices to toast and grind and I don't have that kind of space in my kitchen rn.

Yeah, every brown household I've seen the kitchen of tends to have a lot of stuff around, loads of different spices. Requiring many containers and jars and whatnot lying about.
And the various pots and stuff to cook with like a set-up to soak something like kidney beans I think for cooking. Not compact.

You mean coconut milk based? Because I feel typical broth based soups from Vietnam or Thailand depend much more on the individual shop serving them than on the specific cuisine.

I like a good Pho, but I don't think it's the second coming of Jesus Christ like most people seem to think.

My theory about the popularity of Pho in recent years is that people forgot or never knew in the first place how good any soup with broth made from scratch tastes.

I prefer a traditional Yuropean soup with carrots and celery over Pho.

I do like French bistro cuisine too.  Haven't tried too much of it other than stuff like Steak Frites and Chicken with mustard sauce.

Indian is definitely my fave, vindaloo in particular. I love Thai and BBQ as well. Lately I've been enjoying Georgian and Uzbek, there are a few good places in NY for it.

Vietnamese is the one cuisine I really can't get into, I've tried multiple times but it all tastes so bland. I'd take a bowl of Chinese beef noodle soup or shoyu ramen over pho any day of the week.

Am not big on pho, but I love the vermicelli noodle dishes and especially the rice paper wrapped rolls.  Make the latter myself at home occasionally- it's too good!

I mean I am predisposed to Cajun but we have been FUCKING  with Indian food lately. There is a newish restaurant up the road which is apparently good enough to where people go out in full traditional dress so I guess that counts for something. Kinda like legit Mexican in Vegas or Houston? Thinking on I guess it's a strange vibe to equate the amount of white people in a place with the quality of food.

I feel uniquely blessed to be a white guy that can bring shit to the table when not eating standard murican BS. Yeah fam this sundubu jigae is aight but motherfucker have some jambalaya.

Chinese - most familiar with Sichuan, Cantonese, HK, Xi'ang. There's so much to explore, i love it. Eating in Chinatown is one of my favourite things to do in any city I'm in.

Japanese - first time I went to Japan I got to my house in Yotsuya on the periphery of Shinjuku and randomly chose this nice looking Fukuokan restaurant. I got a Ramen kinda more like a Pho with a lot of really fresh ingredients in a light broth that was cooked in front of me, but instead of beef or cooked chicken, they put raw chicken on top after the dish was cooked and it was indicated I'm supposed to eat it like that. Apparently this chicken was from the stomach lining of the chicken. Was a lil' squeamish at first but dug in because i always do and it blew my mind. Ended up loving every aspect of japanese I had, and developed a new appreciation for Sushi. Most surprising/favourite aspect was how affordable eating out was, and how comparably great it was compared to any equivalent I'd had in the west. Also wish there were shitty hole in the wall breakfast joints here where you could get a bowl of rice, piece of fish, those fermented beans, a bowl of miso and a raw egg for a few bucks like in Tokyo.

Every cuisine has something good. I'm renewing my love with Italian lately, always have time for a lot of Korean, and been getting really into Spanish, but my favs rn are prob chinese and japanese.

This thread definetely makes me envious of the international food options big american cities have. Most asian food here is average and more importantly very boring. Barely any mexican or south america food around here. Turkish stuff can be good but most diners use kinda poor ingredients when it comes to vegetables. Luckily the Pho around here is good, even though the ingredients are unspectacular. But the broth is just right.

Greek is probably something I should check out more often, just a bit expensive for workday lunch.

The quality of the Japanese food in Japan was leagues better than nearly all of the Japanese places I've been to around NY. The Italian food in Italy was also fantastic, but we are pretty blessed with quality Italian here... though the restaurants in Italy definitely had much more diverse menu selections.
