No politics, just chili

Love me some chili con carne. So easy to make and you can use it in so many ways.



I used to use pre-made chili powder mixes, but decided to start using my own mix recently.

I haven't settled on a "set" recipe, but I make a mix out of the following ingredients:
  • paprika
  • smoked paprika
  • coriander seed
  • garlic powder
  • oregano
  • cumin
  • coriander
  • chili flakes
  • cayenne pepper
  • Salt
  • Black pepper
I start with frying an onion and then add some crushed garlic and capsicum. I usually add some bacon and then whatever meat I'm using (minced or diced beef or pork) until it's browned.

After that I start to add the spices until I get the taste I'm looking for and then I add a tin of crushed tomatoes for every 500g of meat. I also add a tin of red or black beans in the same ratio. Sometimes I'll add a couple of tablespoons of tomato paste if I want it richer or I'll add some beef stock.

Once everything is mixed and cooking, I turn the heat down and cook it at a simmer for as long as possible. The longer it cooks, the better it tastes.

chili is 'murican
Texas was Mexican until 19 February 1846. Chili con carne originated from before then.

Mexico isn't part of central america :ufup
When it comes to geopolitics, I go by my own rules.

Central America = brown people (Mexico and anything down to Panama)
North America = whities (Canada and USA)
