Been eating a lot of Dubliner recently and it extremely top-tier. Dry and sharp like parm, but smoother and with a great taste. :lawd

Also got some 1000-day aged Gouda. It's a decent b-tier cheese, but I'm not super into it. :yeshrug

A local market near me sells havarti with dill. Havarti by itself is a little too bland (unless eaten on a cracker), but that little bit of dill brings it to another level.

In all seriousness I love cheese on a charcuterie. Only cheese I cannot wrap my mind around is brie. I have had it many times and I cannot enjoy it.

I am a fucking philistine who has never partaken in truly gourmet cheese

however I at least manage to turn my nose up at any variation of "american" and also kraft singles

I guess food snobbery is shit though, I mean everybody's had boring old colby jacks and sharp cheddars because they're popular, right? a classic is a classic for a good reason

I went to a burger place once where they had a bunch of cheese options and I really didn’t care what I got, cheese is really good so I said “Surprise me”.  Burger came out and it had American cheese on it :goty
